  • Prepare the ingredients

    First, trim the tops and tails of the carrots, then wash them directly under running water to clean, let them drain, and cut into bite-sized pieces.

    Next, you put all the drained carrots into a bowl and proceed to marinate with 3 tablespoons of unsalted melted butter, 3 tablespoons of honey, 1/2 teaspoon of salt, and 1/4 teaspoon of ground pepper.

    Use a spoon to mix well so that the carrots are evenly coated with the seasoning.

    First, you need to preheat the oven to 200 degrees Celsius for 10 minutes. At the same time, take the baking tray and evenly spread the marinated carrots over it, then place it in the oven and roast at 400 degrees Celsius for about 20 – 25 minutes.

  • When picked up, fresh broccoli should feel firm, not too light, and especially, the size and weight of the broccoli should be consistent with each other, without significant differences.
  • It is advisable to limit buying broccoli that has wilted excessively, is bruised, or has too many broken florets as these are signs of spoiled broccoli.

How to choose fresh button mushrooms

  • Fresh button mushrooms typically have a bright white color, with short stems that are not too large.
  • When pressed with your hand, the mushrooms should feel moderately soft, firm, and not overly bruised.
  • It is advisable to limit buying button mushrooms that have unusual tiny spots on the surface and emit an unusual foul smell as these may be spoiled mushrooms.

How to prepare Roasted Cauliflower with Garlic Mushroom Sauce

  • Prepare the ingredients

    First, for the white cauliflower you bought, remove the stem, soak it in a little diluted salt for 3 – 5 minutes, then rinse gently under running water to clean, and let it drain.

    Remove the stems from the button mushrooms, then wash them 1 – 2 times with clean water, let them drain, and chop finely with a knife. Peel the onion and also chop it finely.

    For the thyme, sage, and rosemary, divide them in half, keep one half whole and chop the other half finely.

  • Roast the cauliflower

    Once the ingredients are prepared, take a cast iron pan or a deep baking tray and arrange around it 2 sprigs of thyme, 4 sage leaves, 2 sprigs of rosemary, and 4 cloves of garlic.

    Place the prepared white cauliflower in the center and use a brush to evenly coat it with 4 tablespoons of unsalted butter that has been melted.

    At the same time, preheat the oven to 450 degrees Celsius for about 10 minutes. Then, place the pan in the oven and roast at that temperature for 45 minutes.

    Next, continue to brush another tablespoon of melted unsalted butter over the cauliflower, and roast for another 15 minutes. When the cauliflower is soft, turn off the oven and remove the pan.

  • Make garlic mushroom sauce

    You place a pot on the stove with 3 tablespoons of unsalted butter melting over medium heat. Then, add 1/2 onion, the cut king oyster mushrooms, 1/2 teaspoon of salt, 1/2 teaspoon of ground pepper, and all the remaining chives, thyme, and rosemary.

    Use a spatula to stir-fry for about 3 – 5 minutes. When the king oyster mushrooms are soft, add 3 tablespoons of tapioca starch and continue stirring for 1 minute.

    Next, add 500ml of vegetable broth, cook for another 7 – 10 minutes, until the sauce is thickened, then season to taste and turn off the heat.

    You cut the broccoli into bite-sized pieces, place it on a plate, and drizzle a little garlic butter sauce that you just cooked over it, and it’s done!

    Wash the cabbage, then cut it in half and drain.

  • Choose pears that are neither too hard nor too soft when pressed, as if they are too hard, it means they are not ripe yet, and if too soft, it means the pears have been ripe for too long and are not tasty.

    Wash the white carrots, then cut into small pieces of 1.5cm.

    In a bowl, add 1 tablespoon of Dijon mustard, 2 tablespoons of apple cider vinegar, and 2 teaspoons of honey, then stir well.

  • Roasting pears

    Preheat the oven to 200 degrees Celsius for 15 minutes.
