How to prepare Chicken cooked with plums

  • Prepare the ingredients

    After cleaning the chicken, removing the innards, and rinsing it well, cut it into bite-sized pieces.

    Peel the shallots, garlic, and onion, then finely chop them, keeping the shallots separate from the garlic. Cut the onion into wedges.

    Peel the carrot, cut it into bite-sized pieces, or shape the carrot as desired. Cut the fresh coconut to extract the water.

  • Marinate the chicken

    After preparing the chicken, marinate it with the chopped shallots and half of the minced garlic, 1 tablespoon of oyster sauce, 1/2 teaspoon of salt, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate. Mix well and let it marinate for about 15 minutes.

  • Cooking chicken

    Add 2 tablespoons of cooking oil into the pot, heat the oil and add minced garlic to fry until golden and fragrant. Next, add the marinated chicken to stir-fry until it’s seared.

    Once the chicken is seared, add fresh coconut water, cover, and bring to a boil over medium heat. When it boils, add the carrots.

    Cook for about 10 more minutes until the carrots and chicken are cooked, then add 3 tablespoons of sweet chili sauce. You can adjust the seasoning to suit your taste.

    Cook for another 5 minutes, to thicken the broth, dissolve 1 tablespoon of tapioca flour in a little water and add it to the pot, stir well, add onion, stir evenly and then turn off the heat.

    Put the sour fruit into a cloth bag and squeeze to extract the juice. If you have a fruit juicer at home, you can also put the sour fruit in to extract the juice.

    Add the remaining fresh coconut water along with carrots, add 300ml of filtered water, and simmer on medium heat for about 30 minutes, then season with 1 teaspoon of sugar.

    Cook for another 2 minutes, then add the onion, stir well until the onion is slightly cooked, adjust the seasoning to suit your family’s taste and turn off the heat.
