Fresh oyster meat 200 gr (large) White broccoli 150 gr Green broccoli 150 gr Tomato 1 piece Garlic 6 cloves Ginger 1 piece Purple onion 1/2 bulb Spring onion 10 gr Basil 10 gr Chili 10 gr Common spices 10 gr (fish sauce/seasoning granules/msg/pepper)

How to choose fresh, delicious broccoli:

  • Observe the color of the broccoli when selecting; good broccoli usually has a bright green or white color, not discolored or with brown spots.
  • Next, touch the stem of the green broccoli; those with firm, solid stems, not soft and pliable, are fresh.
  • Broccoli with a higher blooming head is tastier than those with a flat head.
  • Additionally, pay attention to the florets; if the broccoli has no holes, choose it. The tighter the florets with fewer holes, the better.
  • After purchasing, store it in a plastic bag in the refrigerator, which can keep for 3 – 4 days.

How to Cook Stir-Fried Oysters with Broccoli

  • Blanch the Broccoli

    Soak the broccoli in diluted salt water for about 15 minutes, then rinse thoroughly.

    Cut and separate the broccoli into bite-sized pieces.

    Bring a pot of water to a boil, adding 1/3 teaspoon of salt and 1/3 teaspoon of tapioca flour, and wait for the water to boil.

    Add the broccoli to the pot and blanch for about 5 minutes, then remove and let it drain.

    Tip: Blanching the broccoli with tapioca flour helps retain its sweet flavor and vibrant green color.

  • Prepare the Oysters and Vegetables

    The oyster meat should be washed thoroughly with diluted salt water and then rinsed with cold water before use.

    Wash the tomatoes, remove the seeds, and cut them into small cubes.

    Peel and crush the garlic. Slice the ginger. Cut the red onion into diamond shapes.

    Tip: You can buy pre-prepared oyster meat or whole oysters for cooking. Using pre-prepared oysters saves time, but whole live oysters will give the dish a fresher flavor.

    Add oil to the pan and heat it. Next, add 1/2 the amount of crushed garlic and sliced ginger to the pan, stir-fry until fragrant.

    Pour the oysters into the pan, stir well and stir-fry on high heat, then season with 1 teaspoon of fish sauce and 1/4 teaspoon of pepper. Stir quickly until the oysters are just cooked, then turn off the heat and transfer the oysters to a plate. The oyster cooking juice can be placed in a separate bowl.

    Tip: You should stir-fry the oysters over high heat with garlic and ginger to prevent the oysters from releasing water and to enhance the flavor.

  • Stir-fry various ingredients

    Place another pan on the stove and add the remaining garlic to sauté until fragrant.

    Next, gradually add broccoli, red onion, and tomatoes. Season the pan with 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1/4 teaspoon of pepper, and all the oyster cooking juice from before. Stir evenly and stir-fry the vegetables on high heat for about 10 minutes to ensure they are evenly cooked and absorb the flavors.

    Then, add the oyster meat back into the pan, stir-fry for another 2 minutes until cooked through. Finally, add shredded basil, scallions, and sliced chili, stir well, then turn off the heat.

How to cook Stir-fried Oysters with Chili

  • Boiling oysters

    Purchase oyster meat from a store or supermarket, clean off any shell fragments attached to the oyster meat, rinse the oysters with salt and then wash them thoroughly with water, and let them drain.

    Next, place a pot of water on the stove, add a few slices of ginger into the pot, cover it, and boil over high heat until the water starts to boil.

    Quickly add the oysters and boil until the water boils again, then turn off the heat and remove the oysters into a bowl of ice water.

    Tip: Putting the oysters in ice water will help the oyster meat become firmer, making it chewy and tastier when stir-fried.

  • Avoid choosing oysters with eggs, as the meat will be bitter and not tasty. Do not choose oysters with a foul smell, rot, or unusual colors as these are dead oysters.

How to clean oysters from sand

  • If you have time, you can soak the oysters in diluted saltwater with a few chili peppers; this method helps the oysters clean out all the mud inside.
  • After soaking the oysters, use a large brush to scrub from the hinge of the oyster shell along the curved lines to the mouth of the shell to clean it. It is recommended to scrub the oysters under running water. When scrubbing, the water will wash away the mud stuck to the oyster shell. You won’t need to rinse multiple times, making it convenient and time-saving.
  • For larger quantities, you can use a high-pressure spray to quickly wash away the mud stuck on the oyster shells.
  • If using pre-packaged oysters, when preparing, rinse the oysters with diluted saltwater, then rinse again with water and proceed to cook.
