How to make Spinach-filled Christmas Tree Cake
-
Prepare the ingredients
Peel the onion, wash it clean, then dice it.
For the spinach, cut off the stems, remove any wilted or old leaves (if any), then soak it in a diluted saltwater solution for about 5 – 10 minutes, then rinse it under clean water and let it drain.
Heat a pan on the stove, add 1 tablespoon of cooking oil, then add all the spinach and stir-fry over medium heat for about 3 – 5 minutes until the spinach is completely cooked.
Next, transfer the spinach to a bowl and squeeze out the excess water released by the spinach.
Tip: Squeezing out the excess water from the spinach helps the sauce during preparation to be thick and smooth without becoming watery. After draining the spinach, chop it finely with a knife.
-
Make the cream sauce
Place a pan on the stove, add 2 tablespoons of unsalted butter and melt, then add chopped onions and garlic, sauté over medium heat until soft.
Next, add 1 teaspoon of salt, 1 teaspoon of ground pepper, and 2 tablespoons of flour to the pan, and continue to sauté until the onions turn golden.
Then, pour 600ml of heavy cream into the pan, turn the heat to medium and cook until the mixture in the pan boils, then add 1/8 teaspoon of nutmeg powder and stir well.
Next, add 112 gr of cream cheese and 125 gr of mozzarella cheese into the pan, stirring continuously until the cheese completely melts and the mixture becomes smooth.
-
Finish the sauce
Next, add spinach and 62gr of parmesan cheese to the pan, mix well for about another minute, then turn off the heat.
-
Shape the cake
Prepare 1 block of puff pastry then use a knife to cut into 2 layers shaped as equal isosceles triangles with a sharp peak.
Lay the first layer on the cutting board then use a spoon to spread the cream sauce evenly across the surface of the dough.
Next, place the second layer on top, use a knife to make even cuts on both sides of the cake, then gently twist with your hands to create the leaves of the pine tree (as illustrated).
-
Baking the cake
Brush a layer of melted butter on top of the cake and sprinkle a little toasted sesame seeds.
Preheat the oven to 180 degrees Celsius for 10 minutes to stabilize the temperature.
Place the cake in the oven and bake at 180 degrees Celsius for 30 minutes to complete.
