Chicken eggs 3 eggs Dried shrimp 50 gr Lemongrass 1 stalk Green onions 20 gr Shrimp paste 50 ml Ground pork 100 gr Shallots 1 bulb Rice paper 20 gr (a few pieces) Garlic 20 gr (about 4 cloves)

How to make Grilled Rice Paper with Shrimp Sauce using a Charcoal Stove

  • Prepare the ingredients

    Rinse the dried shrimp, soak in warm water for 15 minutes, then rinse again and drain.

    Peel the old lemongrass, rinse clean, smash, and chop finely.

    Wash the green onions and chop them finely.

    Peel the garlic and chop finely.

    Peel the shallots and chop them finely.

  • Make the filling for the rice paper

    Place a pan on the stove, heat three teaspoons of cooking oil, then add the shallots and sauté until fragrant. Add the minced pork and stir-fry, seasoning with 1 teaspoon of seasoning powder, and stir-fry until the meat is cooked. Then add the green onions and stir for another 30 seconds before turning off the heat. Scoop the meat into a bowl and set aside.

    Heat another pan, add the dried shrimp and minced garlic, and fry until the shrimp is evenly cooked, then turn off the heat and pound the shrimp into a fine paste.

    Place a pan on the stove, add a little cooking oil, sauté the minced lemongrass until fragrant, then add the shrimp sauce and 2 teaspoons of sugar, stirring quickly for 2-3 minutes.

    Prepare the charcoal stove, and place the rice paper on the grilling rack.

    Layer the ingredients on top of the rice paper: first, sautéed lean meat with green onions, followed by dried shrimp, shrimp paste with lemongrass, and finally, crack 1 egg on top.

    Spread the filling evenly and sprinkle a little green onion on top.

    Plate the rice paper and serve with a bit of chili sauce to enhance the flavor.

Rice paper 20 pieces Shrimp paste 120 gr Minced meat 100 gr Quail eggs 20 eggs Butter 50 gr (use Tuong An butter) Green onions 3 stalks Pâté 100 gr Chili sauce 1 cup Black bean sauce 3 tablespoons

How to make grilled rice paper with shrimp paste using a non-stick pan

  • Prepare the ingredients

    You take about 3 cloves of garlic, peel them, and mince finely.

    Peel 1 shallot, wash it clean, and chop it finely.

    Wash the green onions and chop them finely.

  • Stir-fry minced meat and make shrimp paste

    You place the pan on the stove, sauté the shallots with a little cooking oil, then add the minced meat to stir-fry.

    Season with 1 teaspoon of seasoning, stir-fry the meat until cooked, then add the green onions and stir-fry together, stirring for about 30 seconds before turning off the heat. You take the minced meat out into a bowl, set aside.

    Take another pan, sauté garlic with a little cooking oil, then add the shrimp paste and stir quickly.

    While stirring, add 2 teaspoons of sugar, the juice of half a lime, and 1 teaspoon of chili powder. Stir until the shrimp paste thickens slightly.

    Preheat a non-stick pan, place the rice paper in the pan, then you spread butter and crack quail eggs evenly over the rice paper.

    Next, add a scoop of pâté, minced meat, shrimp paste, some pickled vegetables, chili sauce, and black sauce evenly over the rice paper.

    After spreading the filling, carefully roll the rice paper and flip it over until it turns golden and crispy.

    The grilled rice paper with shrimp paste is rich in flavor and fragrant, crispy just like when grilled on charcoal. You grill all the rice paper in turn, arrange it on a plate, and enjoy.

  • When grilling the rice paper, be careful not to let the charcoal get too hot, as it makes it difficult to roll and the rice paper can easily burn.
