How to Make Traditional Mushroom Cream Soup

  • Prepare the Shiitake mushrooms

    After washing the Shiitake mushrooms, slice them thinly to your liking.

    Tip: You can wash the mushrooms with rice water to reduce their strong smell and enhance their flavor during cooking.

  • Sauté mushrooms

    Place a pan on the stove, add butter, and 2 teaspoons of cooking oil, stirring until the butter completely melts. Add chopped onion and minced garlic to the pan, stirring continuously to ensure the onion cooks evenly.

    At this point, add all the chopped mushrooms and sauté together with a bit of minced thyme. Sauté until the mushrooms begin to soften, then you should add white wine to enhance the flavor of the soup.

    Tip: You can use either white or red wine according to your preference; if using red wine, you should try Marsala, Sherry, Merlot. You can also try Pinot Grigio or Sauv Blanc.

  • Mixing the mushroom and flour mixture

    Put 1/2 cup of flour into the pan, mix well until the flour is completely dissolved, resulting in a fairly thick mixture. Sprinkle an additional 1/2 teaspoon of ground pepper and 1/2 teaspoon of salt on top.

    Tip:

    • Besides flour, you can mix 2 – 3 tablespoons of corn flour with a little water, stir well until the flour dissolves, then add to the pan and stir with the mushrooms, helping to create the characteristic thickness for the dish.
    • You can also add tablespoons of corn flour into the pan one by one, stirring until you achieve the desired thickness.

  • Cooking the mushrooms

    Add 500ml of broth to the sautéed mushrooms, cook over medium heat. When the mixture comes to a boil, sprinkle about 1 teaspoon of seasoning, stir well, then cover and cook on low heat for about 5 minutes.

  • Making the cream soup

    Add fresh cream and stir well, sprinkle the chopped cilantro along with 1/2 teaspoon of ground pepper and 1/2 teaspoon of salt on top, taste to adjust seasoning, then turn off the heat.

    Note: During cooking, you should not let it boil too much as it will cause the cream to separate, making the dish lose its flavor.

How to choose delicious chicken breast

  • To choose a good chicken breast, you should select a piece with white skin as this indicates the chicken is mature, resulting in firmer and tastier meat. When pressing your finger into the meat, it should be elastic, not mushy, indicating the chicken is fresh.
  • Avoid choosing chicken breast that has an unusual color, blotches, or any signs of bruising or discoloration.
  • If buying chicken breast from the market, it’s best to go in the early morning, or if purchasing from supermarkets, pay attention to the expiration date to ensure the freshness of the dish.
