How to prepare Fermented Shrimp Paste with Pork

  • Prepare the ingredients

    Shallots are peeled, washed, and sliced thinly. Lemongrass is cut off the leaves and roots. Wash with water and then finely chop.

    Wash the chili with water, remove the stem, and chop finely. The galangal is peeled, washed, and then finely chopped. Ginger is washed, peeled, and sliced into thin strips.

  • Marinate the meat

    To marinate the meat, add 1 tablespoon of sugar, 2 tablespoons of annatto oil, and 2 tablespoons of fermented shrimp paste. Then mix well so that the meat absorbs the seasonings and marinate for about 10 minutes.

    Place a pan on the stove, add 2 tablespoons of annatto oil. Wait for the oil to heat up, then add all the chopped shallots, julienned ginger, and chili, stirring continuously until the ingredients start to firm up.

    Add all the minced meat, stir-fry for about 2 minutes. Add all the lemongrass and ginger, mix well and simmer for another 10 – 15 minutes. Adjust the seasoning to your family’s taste and turn off the heat.

  • You should choose eggs with slightly rough shells, avoid selecting those with smooth shells as they may be old.
  • Additionally, you can check by gently shaking the egg; if it doesn’t make a sound, it’s still fresh, but if it makes a loud noise, it’s been stored for a while.
  • You can also hold the egg up to the light; if a small air cell appears and the yolk is round, you should buy it.

  • Prepare the ingredients

    Buy the pork belly, wash it clean, then use a knife to cut it into small bite-sized pieces and put it into the meat grinder to grind for about 5 seconds until the meat is fine and smooth, then stop.

    Peel the shallots and chop them finely. After cutting off the roots of the green onions and washing them clean, place them on the cutting board and chop finely.

    Separate the egg yolks and egg whites, and place them into separate bowls.

    Next, place the bowl back in the pot and steam for another 2 minutes until the egg yolk is cooked, then sprinkle finely chopped green onions and chilies on top for decoration.

    Finally, cover and steam for another 2 minutes before turning off the heat and enjoying it with white rice, eggplant, or cucumber.
