Minced pork 1 kg Pork fat 400 gr Shrimp paste 120 gr Ginger 1 bulb Lemongrass 5 stalks Sugar 11 tablespoons (about 110gr) Seasoning powder 3 tablespoons

  • For whole cuts of pork, first pay attention to the color. The color of good meat is bright pink, not too red and not too pale.
  • Pork that is firm and has high elasticity is good meat. You can test by pressing your finger into the meat; if it springs back immediately, is not slimy, and does not leak water or liquid, it is good.
  • You should choose pork shoulder which has both lean and fatty meat so that your dish is not dry or too greasy.
  • You can buy pork and grind it at home using a meat grinder or have the seller grind it for you.
  • For pre-ground pork, you should buy from reputable shops or supermarkets, and when purchasing, ensure the meat is stored in a refrigerated section, and the packaging is intact to guarantee quality.

  • Delicious shrimp paste will have a characteristic aroma, with a salty taste that is not harsh or astringent.
  • Choose shrimp paste that has a color ranging from bright pink to reddish-brown, with no unusual strange smell.
  • You can buy shrimp paste at reputable stores and supermarkets. When purchasing, you should carefully check the origin, expiration date, and whether the packaging is intact.

  • To render good fat, you should choose the fat from the shoulder or back, which should be opaque white and have good elasticity.
  • Prioritize pieces that have slightly firm fat, which do not feel greasy when touched or have an unusual bad smell when smelled.
  • Additionally, you should avoid pieces of fat that are yellowish-white or have dark black spots.

How to Cook Minced Meat Steamed with Fermented Shrimp Paste

  • Rendering Fat

    Pork fat you buy should be washed clean, remove the skin (if not fried it will explode), cut into small cubes, then put it in a pan to render on low heat for 15 minutes until all the fat is out, then remove the cracklings and set aside.

    • Method 1: To eliminate the odor of pork fat, in addition to soaking the fat in diluted salt water, you can also use salt directly to rub onto the piece of fat, then wash it thoroughly with water.
    • Method 2: Alternatively, you can use lemon or vinegar to rub the piece of pork fat.

  • Marinating Minced Meat

    Rhizome should be peeled, washed clean, then chopped and put into a blender, blended finely, then squeeze to extract the juice, keeping 1/2 cup of the rhizome pulp.

    Lemongrass should be washed clean, minced finely, and then put into the blender to blend finely.

    Add minced pork to a bowl, add rhizome juice, 120g of fermented shrimp paste, 110g of sugar, 3 tablespoons of seasoning, mix well, and marinate for 1 hour for the meat to absorb the spices.

  • Steaming Meat

    Place a pan on the stove over medium heat, add 2 tablespoons of rendered fat, wait for the fat to heat up, then add the minced lemongrass to sauté until fragrant.

    Next, add the marinated meat into the pan and stir well for about 5 minutes until it is firm, then add 1/2 cup of minced galangal and stir evenly.

    Reduce the heat and continue to steam for another 20 minutes until the sauce thickens slightly; at this stage, you can mix in crispy pork fat if you like, or keep it separate to eat on the side.

    Season to taste and turn off the heat.
