How to Cook Pepper Frog

  • Prepare the Frog

    After purchasing the frog, chop off the head, then peel the skin, remove the internal organs and blood vessels, rinse it briefly with water, then rub salt evenly over the frog meat, rinse with clean water, and let it drain.

    Next, use scissors to cut the frog into small bite-sized pieces.

  • Marinate the Frog

    Add the chopped frog along with minced shallots, 1 teaspoon of oyster sauce, 1/3 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, 3 teaspoons of pepper, 1/2 teaspoon of chili powder, 6 bird’s eye chilies, and 2 tablespoons of color sauce into the pan, then use chopsticks to mix and toss the ingredients together. Then add 2 tablespoons of cooking oil.

    Mix well and marinate for about 5 – 10 minutes for the frog meat to absorb the flavors.

  • Braised frog

    After marinating, put the pan on the stove and braise on low heat for about 5 minutes until the water reduces slightly. Then, taste the seasoning to adjust to your liking and braise for another 2 minutes until the water is nearly evaporated, then turn off the heat.

    Scoop the frog onto a plate, sprinkle a little pepper on top and enjoy!

  • To choose delicious green peppercorns, you should buy sprigs with shiny outer skin, and the peppercorns are still tightly attached to the branch without falling off.
  • Additionally, when buying, you should not choose sprigs that have turned black with an unusual smell, as these peppercorns are overripe and dry. Eating them will be spicy and will not retain the flavor of fresh green peppercorns.

How to Make Green Pepper Braised Frog

  • Prepare the Ingredients

    After purchasing the frog, clean it by cutting off the head, peeling the skin, removing the internal organs and blood vessels, then rinse it briefly with water and soak it in a diluted saltwater solution for about 5 minutes before rinsing it several times with clean water and letting it drain.

    Wash the green pepper and let it drain; keep 4 whole peppercorns and crush the remaining one in a bowl using a pestle.

    Wash the yellow horn chili and slice it. Clean the ginger, peel it, and cut it into strips. Wash the shallots and chop them finely.

  • Marinate frog

    After cleaning the frog, place it in a bowl with 1/2 of the sliced ginger, sliced chili, 1 tablespoon of salt, 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of sugar, 1 teaspoon of fried garlic, 1 teaspoon of fried onion, 2 tablespoons of fish sauce, and 1 tablespoon of coconut color.

    Mix well and marinate for about 20 minutes for the frog meat to absorb the spices evenly.

  • Cook frog

    Add 1 tablespoon of cooking oil to a clay pot, wait until the oil is hot, then add the sliced ginger. Sauté until fragrant, then add 1/5 teaspoon of minced shallots and stir until the shallots turn yellow, then add the marinated frog meat.

    Stir-fry for about 8 minutes until the frog meat is firm, then pour the marinade over it, cooking over medium heat for about 10 minutes until the marinade boils and thickens, then add 4 green peppercorns. Mix well and cook for another 2 minutes until most of the cooking liquid evaporates, then turn off the heat.

How to Choose Fresh and Delicious Frogs

  • Good frogs are those that are still alive, with a plump body, large limbs, and a skin color resembling the earth.
  • Additionally, you should choose frogs with bright eyes, slender and firm thighs. The belly of the frog should be yellowish or white, while the back skin may have black or bright yellow spots depending on the frog.
  • The best time to find frogs is during the rainy season, especially from September onwards. During this period, frogs are usually plump as they need to store fat for the upcoming winter, making the meat firm, flavorful, and both chewy and tender.
  • On average, each kilogram of wild frogs ranges from 150,000 – 200,000 VND/kg (price updated as of May 2021).
  • Avoid buying frozen or pre-processed frogs, as the meat will gradually lose its flavor and nutritional quality.

Effective methods to clean and remove the fishy smell from frogs

  • Method 1: Wash the frogs with a mixture of white wine and crushed ginger, then rinse several times with clean water and let them drain.
  • Method 2: Use a mixture of white wine and coarse salt until the frog meat no longer smells, then rinse with clean water.
  • Method 3: Blanch the frogs briefly in a mixture of boiling water containing wine, ginger, and turmeric powder to help the frog meat firm up and optimally remove the fishy smell.
