Rice flour 100 gr Chicken eggs 3 pieces Condensed milk 40 gr Lemon juice 1 teaspoon Vanilla 2 tubes Cooking oil 30 ml Sugar 40 gr Salt 1 teaspoon

What is rice flour?

  • Rice flour is a type of flour made from finely grinding rice grains that have been soaked; it is different from rice starch (which is usually made by soaking rice in an alkaline solution, rather than water).
  • People can use rice flour as a substitute for wheat flour in some recipes. Rice flour is commonly used in the cuisines of Asian countries, such as Vietnam, which often uses rice flour in dishes like bánh canh, bánh bò, bánh đậu xanh, bánh xèo, bún gạo, bánh cuốn, or bánh khoái.

How to make Sponge Cake using blender and steamer

  • Whisking the eggs

    Put 3 chicken eggs, 2 vanilla tubes, 1 teaspoon of salt, 1 teaspoon of lemon juice, and 40g of sugar into the bowl.

    Next, place the egg bowl into a bowl of hot water and use a spoon to stir well until the mixture is combined.

    Then, pour the egg mixture into the blender and blend on low speed for 3 – 5 minutes until the eggs turn light yellow. Finally, pour the mixture into a large bowl.

    The purpose of warming the eggs: Warming the eggs will help them whip faster and stabilize the structure. However, you should only warm the eggs to about 40 – 50 degrees Celsius; otherwise, it will cause the eggs to cook and not whip well.

  • Mixing rice flour

    Put 100g of rice flour and 1 teaspoon of salt into a new bowl and mix well.

    Tip: If you don’t have rice flour, you can completely substitute it with all-purpose flour!

  • Mixing the cake batter

    Gradually add the rice flour mixture into the whisked eggs, using a spatula to gently fold the mixture from the bottom to the top. Bring the spatula down to the bottom of the bowl, lift the heavier ingredients up, and toss them to the side. Continue this process until the mixture is well combined.

    Tip: This is the folding technique in baking. To avoid breaking the small air bubbles that cause the cake to collapse, you should mix the batter according to the technique described above!

    Put 40g of condensed milk, 30ml of cooking oil, and a little bit of the mixed cake flour into a small bowl, then stir well. Finally, pour the mixed mixture back into the bowl of cake flour, and gently mix again until well combined.

  • Steaming the cake

    Pour the cake mixture into the mold, gently tap the mold on the table a few times to break any large air bubbles. Then, tightly cover the mold with plastic wrap.

    Place the mold into the steamer, set the steamer on a pot of boiling water, then cover tightly and steam over medium heat for 60 minutes.

    After 60 minutes, turn off the heat, remove the plastic wrap, and let the cake sit in the steamer (without covering) for 5 – 7 minutes to cool slowly.
