Prepare the shrimp
After purchasing the shrimp, rinse them a few times in water to clean.
Use a knife or scissors to cut off some of the shrimp’s antennae, then peel the shrimp clean, leaving the shell on the head and tail.
Use a knife to make a cut along the back of the shrimp to remove the intestinal vein and create space for the sauce. Rinse again and let it drain.

Prepare the ingredients
Dried mushrooms after purchasing should be placed in a bowl, add 1/2 cup of water, cover the bowl with plastic wrap, and then heat it in the microwave for about 5 minutes.
After 5 minutes, take the mushrooms out, squeeze out the water, and then slice them thinly for eating.
Wash the chili peppers, cut them in half, remove the seeds, and then cut them into strips. Trim the roots of the green onions, discard the old leaves, and then chop them finely or slice them thinly to style.

Sauté the ingredients
Place a pan on the stove, add 1 tablespoon of sesame oil and heat it, then add 1 teaspoon of minced shallots and sauté until fragrant.
When the shallots are fragrant and turn golden, add the shiitake mushrooms and sliced chili.
Add 2 teaspoons of sugar, 2 tablespoons of soy sauce, 2 tablespoons of apple cider vinegar, and 1/2 teaspoon of pepper. Stir well over medium heat for about 5 minutes, when the mixture boils, you can adjust the seasoning to taste and then turn off the heat.

You use a teaspoon to scoop the stir-fried ingredients onto the back of the split shrimp, about 1 teaspoon for each shrimp.
You place a steamer on the stove, when the water boils, you put the plate of shrimp into the pot. Steam on medium heat for about 10 minutes. Once the shrimp turn orange-red, turn off the heat.
Take the plate of shrimp out and add a little green onion to enjoy!
