How to prepare Stir-fried Pork Intestines with Pickled Mustard Greens

  • Prepare the ingredients

    After cleaning and boiling, cut the pork intestines into bite-sized pieces.

    Wash the pickled mustard greens and cut them into pieces, then marinate with sugar and monosodium glutamate.

    Chop the chili peppers, cut the shallots in half, and cut the green onions into sections.

How to Choose Fresh Purple Cabbage

  • You should choose purple cabbage that feels firm, heavy, with tightly curled leaves, a thick head, closed, and a small stem.
  • Choose purple cabbage with dark purple leaves, and crisp, firm texture.
  • Do not select cabbage with brown spots on the leaves, cracks in the core, or a brown stem as these may be old or wilted cabbage.

How to Prepare Stir-fried Dồi Trường with Cabbage

  • Prepare and Marinate Dồi Trường

    Wash the dồi trường thoroughly with water.

    Use salt to scrub the entire dồi trường to clean off dirt. Rinse with clean water about 2 – 3 times.

    First, put a pot of water on the stove and add 1 tablespoon of sliced ginger.

    When the water boils, add the dồi trường and blanch for about 2 – 3 minutes until the dồi trường firms up.

    Then, remove the dồi trường and immediately place it in cold water to maintain its crispness and white color.

    Next, take the dồi trường out and let it drain. Cut the dồi trường into bite-sized pieces, about the width of 2 fingers.

    Place the cleaned dồi trường into a bowl. Add 1 teaspoon of seasoning powder, 1/3 teaspoon of pepper, and mix well to absorb the spices.

  • Prepare the vegetables

    Cabbage should be washed and drained. Cut the cabbage along the existing fibers to about 1/2 finger length.

    Wash the celery, drain it, and cut it diagonally into pieces about 3 finger lengths long. Wash the onion, let it drain, and cut it into wedges.

    Wash the chive flowers and cut them into pieces about 4 – 5 centimeters long. Wash the green onions and coriander and cut them into pieces about 2 finger lengths long.

    Stir-fry for about 5 minutes until the sausage is cooked, then immediately transfer it to a plate.

    Add 1 tablespoon of cooking oil to the pan you just used.

    When the oil is hot, add 1 tablespoon of minced shallots and sauté until fragrant.

    Next, add shredded cabbage and celery to stir-fry with 1 teaspoon of seasoning, 1 teaspoon of sugar, 1 teaspoon of soy sauce, 1 tablespoon of water, chives, and onions.

    Stir all the ingredients evenly and let them absorb the seasoning for about 3 minutes.

    Then, add the previously stir-fried pork intestine and mix well with sliced chili and cilantro.

    Stir all the ingredients for about 30 seconds and then turn off the heat.

How to choose fresh and delicious pig intestines

  • You should choose intestines that look fresh, shiny in color, are firm to the touch, and do not have any slimy texture or unpleasant smell.
  • Avoid buying intestines that are soft, dark in color, or slimy.
  • Good intestines have a plump and round shape, pinkish-white color, with a milky white liquid inside.
  • Avoid buying intestines that are large in diameter, thin, flat, with yellowish liquid inside.

How to properly clean pig intestines

  • To clean the intestines, rinse them under water, remove all the fatty membranes, turn the intestines inside out and rinse thoroughly under running water, then let them drain.
  • Put the intestines in a pot with a little salt, a few slices of fresh ginger, white wine, and enough water to cover the intestines, then boil for about 3 – 5 minutes.
  • Once the intestines are cooked, remove them and soak them in a bowl of cold water mixed with a little alum (or white vinegar) for 10 minutes, then rinse with water 1 – 2 more times.

Some notes when using dishes made from pig intestines

  • Pig intestines contain saturated fat and high cholesterol, and consuming them in excess can increase blood fat, which is very harmful to the cardiovascular system, especially for obese individuals and those with diabetes, high blood pressure, gout…
  • To ensure health, you should only eat pig intestines 2-3 times a week, with each serving being only 50-70g and 30-50g for children.
  • Avoid eating pig intestines that have not been properly cooked, as they are easy to cause bacterial infections, and do not use intestines that have been left overnight.
