How to make Stir-fried Pig Intestines with Pickled Mustard Greens

  • Preparation of ingredients

    To clean the pig intestines, scrub them with 4 teaspoons of vinegar and 2 teaspoons of salt for about 10 minutes, then rinse several times with water.

    Next, boil the pig intestines with 20ml of white wine for about 5 – 7 minutes, then remove and rinse with cold water. After that, drain and cut into bite-sized pieces.

    • Step 1: To clean the pig intestines, wash them thoroughly with water, remove all the membrane fat, turn the inside of the intestines out and wash under running water, then drain.
    • Step 2: Place the pig intestines in a pot with a little salt, a few slices of fresh ginger, white wine, and water that covers the intestines, then boil for about 3 – 5 minutes.
    • Step 3: When the intestines are cooked, remove them and soak them in a bowl of cold water mixed with a little alum (or white vinegar) for 10 minutes, then rinse with water 1 – 2 more times.

    Sour mustard greens are cut into bite-sized pieces, then washed thoroughly and squeezed to remove excess water.

    Place a pan on the stove, add 2 tablespoons of cooking oil to the pan. Wait for the oil to heat up, then add minced onion and garlic to sauté until fragrant.

    Then, season with 1 tablespoon of fish sauce, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of seasoning powder, and 1.5 tablespoons of sugar into the pan and stir continuously for 5 – 7 minutes for the pig intestines and sour mustard greens to absorb the seasoning evenly.

    Finally, taste and adjust the seasoning as needed, then turn off the heat. Serve everything on a plate, sprinkle a bit of ground pepper on top, and it’s done.
