Tender intestines 400 gr Chicken leg mushrooms 4 pieces Onion 1 bulb Chili 2 pieces Annatto oil 1 tablespoon Oyster sauce 1 tablespoon Soy sauce 2 tablespoons Cooking oil 1 tablespoon Shallots 2 bulbs Garlic 2 bulbs Vietnamese coriander 5 sprigs Green onions 2 sprigs Lemon 1 piece Common spices a little (pepper/ monosodium glutamate/ seasoning powder/ salt)

How to choose good chicken leg mushrooms

  • First, you should choose mushrooms that are white, bright, without black spots, bruises, or blemishes.
  • Choose firm mushrooms that are not soft or wilted.
  • Do not select mushrooms with cracked caps, as they may have been stored too long; choose those with firm, solid caps.

How to make Stir-fried Pig Intestines with Mushrooms

  • Prepare the pig intestines

    Put the pig intestines into a large bowl with 2 tablespoons of coarse salt and 1 sliced lemon, then rub the intestines with the salt and lemon mixture. For a cleaner result, turn the inside of the intestines out and scrub with lemon several times to remove all the dirt.

    After that, rinse the intestines under 2 – 3 times of water and let them drain, then cut into bite-sized pieces.

  • Prepare the other ingredients

    Clean the chicken leg mushrooms, trim the stems, and cut diagonally into bite-sized slices. Remove the stems from the horn chili and cut into pieces. Peel the onion and cut into wedges.

    For the green onions and Vietnamese coriander, trim the roots, wash them clean, and cut into pieces about 2 large finger lengths. Peel the shallots and garlic, then finely chop.

  • Stir-fried intestines

    You add 1 tablespoon of cooking oil to the pan, when the oil is hot, add chopped shallots and garlic to fry until fragrant. When the shallots and garlic are golden, add the pig intestines and onions to stir-fry over medium heat until the intestines are firm.

    You season with 1/2 teaspoon of seasoning powder, 1/3 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of red color oil, 1 tablespoon of oyster sauce, and 2 tablespoons of soy sauce.

    To make it more to your taste, you can adjust the seasoning according to your family’s preference!

    Next, you add chicken thigh mushrooms and chili peppers to stir-fry until the mushrooms are soft, and the spices are evenly absorbed into the pig intestines as well as the other ingredients.

    You add green onions and Vietnamese coriander, stir well for another 2 minutes to complete the dish.

    The pig intestines are chewy, fragrant, and particularly absorb the spices; the chicken thigh mushrooms are soft but still retain their crunch; the fresh onions, along with various ingredients and spices, make the stir-fried dish even more delicious and flavorful, making it impossible to get tired of eating.

How to Cook Stir-fried Pork Intestines with Garlic and Chili

  • Prepare the pork intestines

    To clean the pork intestines thoroughly, so they are not bitter and smelly, when you buy them, turn them inside out, or use scissors to cut along the length of the intestines to easily wash off the slimy residue inside.

    Next, mix the intestines with a little salt, fish sauce, and a bit of lemon juice, massage for a while, then rinse under strong running water to wash away the mucus.

    Then, bring 1 liter of water to a boil with 1 crushed ginger root. When the water is boiling, quickly boil the intestines for 5 minutes, then remove them.

    To keep the intestines crispy and clean, place them in a bowl of cold water and soak for 15 minutes, then remove, drain, and cut into bite-sized pieces.

    Place the pork intestines in a large bowl with 1/2 teaspoon of MSG, 1/2 teaspoon of sugar, 1/2 teaspoon of pepper, 1.5 teaspoons of fish sauce, and a slice of lemon, then mix well.

    Next, add 1/2 teaspoon of minced garlic and 1/2 teaspoon of minced chili, then stir the mixture evenly and marinate for 30 minutes.

    You put 2 tablespoons of cooking oil in the pan, when the oil is hot, add 1/2 teaspoon of minced garlic and 1/2 teaspoon of minced chili to sauté until fragrant. When the shallots turn golden, add the intestines and stir-fry over medium heat. Remember to stir constantly so that the pig intestines are firm, absorb the seasoning evenly, and do not burn!

    Tip: To prevent the intestines from becoming too tough, you should only stir-fry quickly for 4 – 5 minutes.

How to choose delicious pig intestines

  • The small intestines of pigs often have a bitter taste, so when purchasing, you should go to the market early, choose the type with a small end, a narrow base, a round and firm intestine, pinkish white color, and the fluid inside should be milky white.
  • Thin, flat sections of intestines with yellow fluid inside, large and thick, especially those with blood streaks, will be tough and bitter.

How to clean pig intestines without odor

  • To clean pig intestines thoroughly, without bitterness and odor, when you get the intestines home, turn them inside out, or use scissors to cut along the length of the intestines to easily wash off the slimy substance inside.
  • Then mix the intestines with a little salt, a bit of lemon juice, massage for a moment, then rinse under strong running water to remove the slime.
  • Bring a pot of water to a boil. Once the water boils, add the small intestines. Add 2 stalks of green onion, a few slices of ginger, 1 tablespoon of fish sauce, and 1 tablespoon of soy sauce to the pot.
  • Blanch the pig intestines until the water starts to boil again, then remove them. Immediately place the intestines into a bowl of ice water with a squeeze of lemon juice for about 15 minutes. Then cut the intestines into bite-sized pieces about 5cm long.
