- Choose mushrooms that have a firm stem, a large cap, but should not be too torn. The tip of the mushroom is slightly concave, and under the cap, there are thin, feathery gills.

- Do not choose oyster mushrooms that are bruised, torn, leaking, or have an unusual odor.
How to choose fresh and delicious beef
- Select pieces of meat that have a soft, small fiber and do not look too fine, with a bright red color interspersed with white streaks and the fat having a bright yellow color.
- Choose pieces of beef that have good firmness and elasticity, without feeling sticky when gently pressed with your hand.
- Avoid purchasing pieces of beef that have a pale green or dark red color, with dark yellow fat, showing white spots on the meat fibers and feeling mushy and slimy to the touch.

Wash the bought beef with diluted salt water for cleanliness, then rinse with cold water and drain.
Cut the beef into bite-sized pieces and marinate with 1/2 teaspoon of MSG and 1 teaspoon of seasoning. Mix and let sit for about 15 minutes for the beef to absorb the spices.
How to clean beef, odor-free
- Method 1: Eliminate the odor of beef by rubbing crushed ginger (after roasting the ginger) all over the meat, then rinse with clean water.
- Method 2: After washing the beef with water, you can rinse it again with rice wine or soak the meat in rice wine for about 15 minutes.

Prepare the other ingredients
Separate the oyster mushrooms, trim the stems, then wash and drain.
Peel and slice the shallots. Wash the green onions and chop them finely.

Sautéed beef with mushrooms
Place a pan on the stove, add 1 tablespoon of cooking oil to the pan. When the oil is hot, add shallots and sauté until fragrant.
Next, add all the beef, increase the heat to high, and stir-fry for about 2 minutes until the meat is cooked and firm, then remove it to a plate.
Return the oyster mushrooms to the pan on the stove, stir-fry evenly. Season with 1 tablespoon of seasoning powder and 1/2 teaspoon of salt. Stir-fry for about 3 minutes until the mushrooms are cooked, then add the beef back in and stir-fry together for another minute.
