Lin fish 350 gr Sugar cane 200 gr Coconut 1 fruit (large type) Green onion 3 stalks Shallot 2 bulbs Garlic 3 cloves Chili 3 fruits MSG 1 teaspoon Fish sauce 2 teaspoons Pepper 1/2 teaspoon Rock salt 1 tablespoon

How to cook Linh fish with sugar cane

  • Prepare the ingredients

    You buy cleaned linh fish at the market or supermarket, then at home you use coarse salt to rub and wash it with clean water, then drain.

    Next, you prepare the other ingredients as follows: after peeling the sugar cane, cut it into small pieces about 2 finger lengths, then slice thinly.

    Shallots and garlic are peeled and minced. Green onions and chili are washed and chopped.

  • Marinate the fish

    Put all the cleaned linh fish into a large bowl, add 1 teaspoon of minced garlic, 1 teaspoon of minced shallots, 1 teaspoon of seasoning powder, 2 teaspoons of fish sauce, 1/2 teaspoon of pepper, and a little chopped green onion, mix well and let the fish absorb the spices for about 15 – 20 minutes.

  • Fish stew

    First, evenly arrange the sugarcane slices at the bottom of the pot, then spread the fish on top. Next, pour fresh coconut water over it.

    Place the pot on the stove, turn the heat to medium, wait for the water to boil, then reduce the heat to low and stew until the water thickens. Turn off the heat and add chopped green onions and chili.

    Tip: If there are many linh fish, place a layer of sugarcane interspersed with a layer of fish so that the fish stews have a richer flavor by absorbing the sugar from the cane.

How to cook Braised Linh Fish with Tamarind

  • Prepare ingredients

    Buy cleaned linh fish, remove the intestines and cut the gills, just rinse with diluted salt water and wash again with clean water, let it drain.

    The tamarind fruit you buy should be peeled and kept whole or cut in half diagonally. Wash the spring onions and chili, then chop them finely.

    You place the cleaned fish into a bowl, including seasonings: 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, 1 teaspoon of minced garlic and onion, 1 teaspoon of coloring sauce, and 1/2 teaspoon of pepper, mix well and let the fish absorb the seasoning for about 15 minutes.

  • Cooking fish

    Put the pot on the stove, add 2 tablespoons of cooking oil to sauté the remaining minced garlic and onion. Then, add all the marinated fish into the pot, stir gently and wait for the fish to release its juices and boil.

    At this point, add 2 tablespoons of fish sauce, wait for the pot to boil again before adding fresh coconut water.

    When the coconut water boils, add the tamarind, reduce the heat and cook until the tamarind softens, then you can adjust the seasoning again to your liking.

    Finally, taste the seasoning to your preference and add chili (if you like it spicy), scallions, and sprinkle a little pepper into the pot before turning off the heat.
