How to Cook Spicy Fried Tofu Skin with Lemongrass and Chili

  • Prepare the Ingredients

    Fresh tofu skin bought should be rinsed briefly with water and allowed to drain. Then, cut into bite-sized pieces.

    Lemongrass should have the wilted outer layers removed, then washed and drained. After that, cut into thin slices and finely chop.

    Chili should have the stems removed, washed, drained, and then finely chopped.

  • Fry the tofu skin

    Place a pan on the stove, turn to medium heat, and add 100ml of cooking oil to the pan. Wait for the oil to heat up, then add the tofu skin and fry until both sides are golden, then remove and let drain the oil.

  • Make spicy sauce

    In a small bowl, add 2 tablespoons of sugar, 2 tablespoons of ketchup, 2 tablespoons of chili sauce, 3 tablespoons of soy sauce, 3 tablespoons of fish sauce, and 1/2 teaspoon of monosodium glutamate, then stir well until all the seasonings dissolve.

  • Stir-fry tofu

    Once the mixture in the pan has thickened, add the fried tofu and stir well until the sauce evenly coats the tofu pieces, then turn off the heat and transfer everything to a plate.

    Place a pan on the stove, add 5 tablespoons of cooking oil to the pan. Wait for the oil to heat, then add the tofu skin and fry until both sides are golden and crispy, then remove and drain the oil.
