Water spinach 500 gr Peanuts 80 gr Dried shrimp 40 gr Tomatoes 2 pieces Red onion 50 gr (about 10 – 15 bulbs) Vietnamese mint a little Lemons 2 pieces Garlic 5 cloves Fresh chili 1 piece Fish sauce 3 tablespoons Cooking oil 2 tablespoons Common spices a little (salt/ sugar/ seasoning powder)

How to choose delicious dried shrimp

  • Choose dried shrimp that has a bright red natural color (the color of shrimp roe), which indicates that it is freshly dried shrimp.
  • Delicious dried shrimp usually has firm, solid flesh and does not have a strong smell.
  • Prefer to choose dried shrimp that is smaller than a chopstick. Larger dried shrimp may be those that have been soaked in chemicals to expand.
  • Additionally, to ensure safety and hygiene, you can also make dried shrimp at home.

How to prepare Water Lily Salad with Dried Shrimp

  • Roast peanuts

    Place a pan on the stove and add peanuts along with 1 tablespoon of salt. Use chopsticks to stir evenly and roast the peanuts over medium heat until the peanut shells turn a brownish-yellow color, then turn off the heat.

    Wait for the peanuts to cool slightly, then gently squeeze the peanuts to separate the shells.

  • Prepare the ingredients

    Pick the young tops of the water lily stem, then wash them clean and let them drain.

    Next, wash the dried shrimp with water.

    For the shallots, peel them, wash them clean, then use a peeler to slice them thinly.

    After washing the tomatoes, cut them into thin slices.

    Wash the garlic and chili, then mince them finely. Finally, for the Vietnamese mint, wash it clean, let it drain, then chop it finely.

  • Stir-fried dried shrimp

    Place a pan on the stove and add 2 tablespoons of cooking oil to the pan. Add all the shallots into the pan and sauté over high heat until the shallots start to turn yellow, then reduce to low heat.

    To prepare the dried shrimp, take a bowl and add 1 tablespoon of water, 1 teaspoon of seasoning powder, and 1 teaspoon of sugar, then use chopsticks to mix well until the ingredients are dissolved.

    When the shallots are done frying, remove half of the shallots from the pan into a bowl for mixing the salad. After that, add all the dried shrimp into the pan along with the prepared seasoning mixture, stir-frying until the shrimp become sticky.

  • Make the dressing

    Cut 2 limes into small pieces to extract the lime juice.

    Then, pour the extracted lime juice into a bowl, add 3 tablespoons of sugar, 3 tablespoons of fish sauce, along with the minced garlic and chili. Mix the ingredients well to dissolve all the seasonings.

  • Mixing the salad

    Gradually add water spinach, dried shrimp, half of the remaining fried onions, Vietnamese coriander along with half of the sliced tomatoes, and finally the roasted peanuts into a bowl.

    Next, drizzle the prepared salad dressing over the top and gently mix to ensure the salad absorbs the seasoning without crushing the water spinach.

    After mixing, prepare a plate and arrange the remaining half of the tomatoes around the plate for decoration. Serve the water spinach and dried shrimp salad on the plate, and the dish is ready for you to enjoy!

How to choose fresh and good shrimp

  • When selecting shrimp, you should choose those that are fresh with a clear shell and a slight sea smell, not fishy. Avoid shrimp that have dark patches or inconsistent colors.
  • Fresh shrimp usually have tails that are tightly folded, a slightly curved body, firm flesh, and the shell joints are flexible, not loose. The head and body of the shrimp are tightly attached.
  • If you lift the shrimp and notice it is slimy or when you press lightly with your finger and feel a gritty texture on the shell, then do not buy it.

How to prepare Fresh Shrimp and Water Fern Salad

  • Prepare and season the shrimp

    When buying shrimp, cut off the head, peel off the shell, and remove the black vein of the shrimp.

    Next, rinse the shrimp with diluted salt water and let it drain.

    Tip: To quickly remove the shrimp vein, bend the head of the shrimp at a 45-degree angle, gently squeeze the head part, and then slowly and carefully pull it out to remove the vein along the back of the shrimp.

    After preparation, add 1/2 teaspoon of seasoning and 1/2 teaspoon of pepper to the shrimp, mix well and marinate for 10 – 15 minutes for the shrimp to absorb the spices.

    Prepare a bowl and add 1 teaspoon of minced chili, 1 teaspoon of minced garlic, 2 tablespoons of sugar, 2 tablespoons of fish sauce, and 2 tablespoons of lime juice. Then, mix the ingredients well until they are fully dissolved.

    Tip: To have a delicious salad dressing, make sure to mix the fish sauce, sugar, and lime juice in a ratio of 1:1:1, and for the minced garlic and chili, you can adjust according to your taste!

  • Stir-fry shrimp

    Place a pan on the stove and add 2 tablespoons of cooking oil into the pan. Wait for the oil to heat up, then add 1 teaspoon of minced shallots and 1 teaspoon of minced garlic remaining, stir-fry until fragrant.

    Next, add the shrimp and stir-fry over high heat for about 5 minutes until the shrimp is fully cooked. Then, turn off the heat and wait for the shrimp to cool.

    Place a deep pan on the stove and add 2 tablespoons of cooking oil into the pan. Wait for the oil to heat up, then add the remaining 1 teaspoon of shallots to fry until fragrant and then turn off the heat.

    Wait until the oil and shallots in the pan cool down, then add the crab claw vegetables into the pan to mix. Gradually add the dressing, stir-fried shrimp, fried shallots, and roasted peanuts on top, then gently toss to evenly coat the salad and avoid crushing the crab claw vegetables.

    Note: Wait until the fried shallots have completely cooled before adding the vegetables to mix; otherwise, the vegetables will lose their crispiness.

    Finally, serve the salad on a plate and get ready to enjoy!
