How to prepare Water Lily Salad with Dried Shrimp

Roast peanuts
Place a pan on the stove and add peanuts along with 1 tablespoon of salt. Use chopsticks to stir evenly and roast the peanuts over medium heat until the peanut shells turn a brownish-yellow color, then turn off the heat.
Wait for the peanuts to cool slightly, then gently squeeze the peanuts to separate the shells.

Prepare the ingredients
Pick the young tops of the water lily stem, then wash them clean and let them drain.
Next, wash the dried shrimp with water.
For the shallots, peel them, wash them clean, then use a peeler to slice them thinly.
After washing the tomatoes, cut them into thin slices.
Wash the garlic and chili, then mince them finely. Finally, for the Vietnamese mint, wash it clean, let it drain, then chop it finely.

Stir-fried dried shrimp
Place a pan on the stove and add 2 tablespoons of cooking oil to the pan. Add all the shallots into the pan and sauté over high heat until the shallots start to turn yellow, then reduce to low heat.
To prepare the dried shrimp, take a bowl and add 1 tablespoon of water, 1 teaspoon of seasoning powder, and 1 teaspoon of sugar, then use chopsticks to mix well until the ingredients are dissolved.
When the shallots are done frying, remove half of the shallots from the pan into a bowl for mixing the salad. After that, add all the dried shrimp into the pan along with the prepared seasoning mixture, stir-frying until the shrimp become sticky.
