  • Prioritize selecting tenderloin with bright red color, white veins, and bright yellow fat.

  • There should be no unpleasant or strange odors.

  • Choose bell peppers with shiny skin and bright color on the outside.
  • When held in hand, they should feel heavy and have a fresh stem, not wilted or bruised.
  • It is best to select those with a medium size, avoiding too large or too small ones for a fresher taste.

How to prepare stir-fried young corn with beef

  • Prepare the beef

    Rinse the piece of beef you bought under water and let it drain. Then, use a knife to slice it into moderately thick pieces about 2cm long.

    Tips for cutting beef to avoid toughness and ensure taste:

    • Use a sharp blade to quickly slice the beef without deforming the piece.
    • It is best to slice against the grain to make the beef tender and not tough.
    • You should place the piece of beef in the refrigerator for about 7 minutes before slicing, which will help you cut the beef more easily and achieve desired thin slices.

  • Prepare the other ingredients

    You can buy pre-cooked chestnuts from outside or buy them raw and then put them in a pot of water to boil. After that, peel and slice them thinly.

    For the young corn, wash it with diluted salt water, rinse with clean water, drain, and cut into 2cm long pieces. Cut off the ends of the snow peas, you can remove the strings on both sides and then rinse them clean.

    For the red bell pepper, remove the seeds and slice it thinly. Peel the onion, then cut into thin wedges about 0.5cm thick. Peel the garlic and mince it finely.

  • Marinate the beef with spices

    Put the sliced beef into a bowl, and gradually marinate with the following spices: 4 tablespoons of soy sauce and 1 tablespoon of cornstarch, mix well and let it sit for about 10 – 15 minutes.

    After the beef has absorbed the spices for the right amount of time, use clean hands to squeeze out some of the marinade and transfer the beef to another bowl. The leftover marinade, you can add to the stir-fry sauce mixture in the next step.

  • Make the stir-fry sauce

    You stir well the mixture in a bowl consisting of: 120ml of water, 60ml of oyster sauce, 2 tablespoons of soy sauce, 2 tablespoons of Shaoxing wine, 1 tablespoon of sugar, 1/4 tablespoon of ground pepper, and the beef marinade (from the previous step).

  • Sauté vegetables briefly

    Place the pan on the stove, turn on medium heat, add 1 tablespoon of cooking oil to sauté the bell peppers, baby corn, and chestnuts (already prepped) for about 15 minutes.

    Then, add the snow peas and sauté for another 10 minutes before transferring the vegetable mixture to a bowl.

  • Fry beef briefly

    Next, add 1 tablespoon of cooking oil to the pan to fry the beef slices (marinated), about 3 minutes on each side, then remove.

    You can use another pan or take a clean cloth to wipe off the excess oil on the pan you just fried the beef.

    Add 1 tablespoon of cooking oil to sauté the chopped onion and garlic for about 2 minutes. Then continue adding the beef and vegetable mixture to the pan, stirring for 2 minutes.

    Finally, add all the sauté sauce and stir well for another 2 – 3 minutes before turning off the heat.

      Continue to add the okra to the pot, stir well, and cook for an additional 2 minutes until you feel the baby corn and okra are to your liking. Turn off the heat and let it drain a bit.
