How to choose good shiitake mushrooms
You can use either fresh or dried shiitake mushrooms!
For dried shiitake mushrooms
Choose ones that are firm, not broken, bright in color, and free from white mold. You should buy from reputable sources to ensure safety.
For fresh shiitake mushrooms
- It is advisable to buy those with bright colors, a distinctive aroma, moderate caps, tightly curled, with a slightly yellowish-brown color.
- Select mushrooms with firm stems, uniform color, and if the mushrooms have opened, the gills should be evenly spaced, beautiful, and dry.
- Avoid choosing mushrooms that are bruised, have a rotten smell, or are slimy. If you see mushrooms that are dark brown, do not buy them, as they may be poisonous.
How to cook Chicken Noodle with Mushrooms

Prepare and marinate the chicken
After purchasing the chicken, rub it with coarse salt and rinse it with clean water, then drain and cut it into bite-sized pieces. Next, marinate the chicken with 1/3 teaspoon of pepper, 1/2 teaspoon of salt, 1 tablespoon of cooking oil, and 1 teaspoon of cornstarch for about 15 minutes.

Minced garlic.
Wash the red apples, then cut them in half and remove the seeds. Wash the cabbage and then separate the leaves.
Soak the dried shiitake mushrooms until soft, then rinse with clean water, gently squeeze to drain. Remove the stems, then slice the mushrooms into thin pieces.
Tip for quickly softening dried shiitake mushrooms:
- Rinse the dried shiitake mushrooms in water to clean off dirt, soak the mushrooms in hot water at 60 – 80 degrees Celsius for about 7 – 10 minutes to let them expand.
- When soaking, make sure the stem part of the mushroom is in contact with the water surface.
- After soaking, gently rub them to remove all dirt, then rinse again with clean water, cut off the mushroom stems and you can cook them right away (the stems are very hard, leaving them in when cooking will not taste good).
