How to cook Udon noodles with beef and soft-boiled eggs

Prepare the ingredients
Wash the beef, drain, and slice thinly. Cut the body of the Baro onion into small pieces and chop the leaves finely.

Make Dashi broth
You put 10 gr of Kombu into a bowl, add 500 ml of water and soak to expand.
You boil water in a pot and add Kombu, boil for 5 minutes, then remove the kombu, let it cool, and cut into strips.
From the pot of Kombu water, add 15 gr of bonito flakes and boil for 2 minutes, then remove the fish to take the clear broth.
From the broth, add 1 teaspoon of sugar, 1 tablespoon of soy sauce, and 1 tablespoon of Mirin, stir well to dissolve the seasonings and then turn off the heat.

Stir-fry beef
You heat a pan over the stove, add 1 tablespoon of cooking oil, 1 tablespoon of chopped onion, sauté until fragrant, then add the beef to stir-fry.
Add 1 teaspoon of sugar, 1 tablespoon of soy sauce, stir well and continue stir-frying the beef for 2 minutes, then turn off the heat.

Final Product
You boil a little water, add Udon noodles and cook for about 2 minutes, then take them out and dip them in cold water to remove impurities from the noodles and make them firmer.
You put the Udon noodles into a bowl, add broth, beef, soft-boiled egg, Kombu seaweed, a little green onion, and invite your family to enjoy it.
Tips for Successful Execution
You can substitute Kombu seaweed with Wakame seaweed (the type of fresh seaweed used for soup).
