How to prepare Garlic Butter Stir-Fried Crab

  • Prepare the crab, boil the crab

    Fresh crabs should be washed thoroughly with diluted salt water to effectively remove parasites, then rinse again with clean water.

    Turn on the stove, place a pot on the heat, add water to 3/4 of the pot’s capacity, and boil for 15 minutes.

    Next, add the crabs to boil for 7 minutes, then use a sieve to take them out and let them drain.

    Tip: When the water is boiling, add 4 – 5 slices of ginger and 1 tablespoon of white wine to eliminate the fishy smell of the crabs.

    Peel the garlic, wash it thoroughly, and then use a knife to chop it finely.

    Turn on the stove, place a pan on it, and add 30ml of cooking oil, heating it until boiling.

    When the oil is hot, add all the minced garlic and sauté until fragrant, using a ladle to stir until the garlic turns slightly dark golden, then add 10gr of butter to sauté with the garlic for aroma.

    Next, when the butter has completely melted, gradually add the seasonings: 1 tablespoon of fish sauce, 2 tablespoons of sugar, 1 teaspoon of monosodium glutamate, 1 tablespoon of satay chili, and finally, 1 tablespoon of oyster sauce.

    Then, use a ladle to stir evenly for 2 minutes so that all the seasonings dissolve, and then add the boiled crab claws, stir-frying for about 10 minutes until the crab claws absorb the seasonings, and the garlic butter sauce thickens, then turn off the heat.

  • Prepare the ingredients

    Clean the crab, remove the shell, and use scissors to cut it in half.

    Slice the ginger into thin strips. Cut the green onion into bite-sized pieces.

    Mix soy sauce, curry powder, crab roe, 1/2 teaspoon of pepper, oyster sauce, and 1 tablespoon of sugar in a bowl.

  • Avoid buying in the middle of the lunar month, as crabs are molting during this time, making the meat bland, less in quantity, and soft, which will not taste good.
  • You should choose crabs that are of moderate size, big enough to hold in your hand, as these are usually meatier, firmer, and sweeter.
  • To know if the crab is still fresh, hold the crab up, turn it over, and press on the crab’s chest (do not press on the abdomen). If the chest sinks in, that crab is not good. Conversely, if it does not sink, it indicates a fresh, firm crab with 95% quality.
  • Additionally, you should observe the crab’s abdomen; if the abdomen fits tightly against the body, it means the crab has not spawned much, and the meat is firm.
  • It is recommended to buy green crabs as they are considered to have firm, fragrant, sweet meat and are the most nutritious among all crab types.
