How to Prepare Aloe Vera with Chia Seeds and Rock Sugar

  • Prepare and Cut Aloe Vera

    After buying aloe vera, wash it briefly with water to remove dirt, then cut it into pieces about the length of one hand.

    Next, use a peeler to remove the skin and soak it in water, rinsing for about 2 minutes, then take it out to drain and cut into small cubes.

  • Soak and Blanch Aloe Vera

    Add 1.5 teaspoons of salt along with 2 liters of water into a bowl, stir well until the salt dissolves, then add the diced aloe vera. Soak for about 10 minutes to allow the aloe vera to release all its sap, then rinse several times with clean water and let it drain.

    Next, boil water and wait until the water cools down to about 40 – 50 degrees Celsius, then add the cleaned aloe vera. Blanch for 5 minutes, then remove and place it in a bowl of ice water, soaking for about 5 minutes until the ice melts, then take it out to drain.

  • Mix aloe vera with sugar

    Add the aloe vera that has been soaked in ice water with 90g of rock sugar into a bowl, then toss, mix well, and marinate for about 30 minutes for the aloe vera to absorb the sugar evenly.

    Boil 2 liters of water in a pot over high heat until the water starts to boil, then add 1/2 teaspoon of salt, the remaining 90g of sugar, and 6 stalks of pandan leaves tied together. After that, cook for about 10 minutes on high heat, then remove the pandan leaves and turn off the heat.
