- You should choose water spinach bunches with uniformly green leaves, thin but sturdy stems, which indicates fresh water spinach.
- Observe the leaves of the water spinach; if the leaves are intact, not bruised, and show no signs of pests, then it is good quality.
- Avoid buying water spinach bunches with curled leaves or other abnormal shapes as they are usually infested with pests and not suitable for cooking.
How to choose fresh and delicious shrimp
- You should choose shrimp that have a firm shell and a translucent color; these shrimp will taste better and sweeter when cooked compared to those with a brownish-black shell.
- Opt for fresh shrimp with tightly curled tails; if the tails are spread out, it may indicate that the shrimp have been injected with chemicals, compromising their quality, so you should avoid buying them.
- Avoid shrimp that have an unusual fishy smell; if you can easily separate the parts when holding them, it means the shrimp have been left out for too long and are spoiled.
How to make Vegetable Soup with Shrimp

Prepare the ingredients
With 1 bunch of vegetable leaves after purchasing, you should pluck the soft leaves, discard the old leaves and stems, then rinse thoroughly with water, let drain, and use your hands to crush the vegetables slightly.
Next, rinse 100g of shrimp, peel them, and remove the black vein.
Finally, trim the roots and any damaged leaves from 3 stalks of green onions, then wash them and let them drain. Use a knife to cut off the green onion tops, place them in a mortar with a little ground pepper, and then use a pestle to grind them finely.
You can use the remaining green parts of the green onion to season the soup when it’s finished.

Cook the soup
Turn on the stove on medium heat, add 1 tablespoon of cooking oil to the pot, wait for the oil to heat up, then add the minced onion and pepper to sauté until fragrant.
Next, add the shrimp and stir evenly for about 1 minute until the shrimp firms up, then add about 600ml of water, 1 teaspoon of salt, 1 tablespoon of seasoning powder, 1 teaspoon of monosodium glutamate, and 1 teaspoon of sugar, then stir well.
Then, you adjust the heat to high, cook the soup until boiling, then add the vegetable and wait for the soup to boil again for another 5 minutes.
Season to taste, stir well, and cook for about 2 more minutes before turning off the heat. Now, you can serve the soup in a bowl, sprinkle a little ground pepper on top, and enjoy.
