How to prepare Stir-fried Dọc mùng with chicken intestines

  • Prepare the ingredients

    After buying chicken intestines, you should gently rub them with salt to remove the blood and liver, then wash them clean and cut them into bite-sized pieces.

    Next, you should remove the fat from the chicken liver and cut it into 2 or 4 pieces depending on whether the liver is large or small.

    After cleaning the chicken gizzard, you should score it for a nice appearance. The chicken heart should be cut in half lengthwise and any clotted blood removed.

    Next, peel the dọc mùng, wash it clean, and cut it diagonally. As you cut, drop the pieces into a bowl of salted water to keep them fresh.

    Continue by wearing gloves and using your hands to squeeze the dọc mùng to release its water. Squeeze about 3-4 times, then wring out the dọc mùng to remove all excess water and set it aside in a basket.
