- You should choose water morning glory that is of moderate size, not too big and not too small.
- Edible water morning glory is grown in areas with water, and has a red spot in the middle of the leaf stalk. If it has a white spot, you should not buy it because it is the itchy type, which is inedible.
- Limit buying water morning glory that has been cut or is bruised and darkened.
How to choose fragrant and fatty peanuts
- You should choose peanuts that have shiny, beautiful shells, uniform large sizes, and feel firm when held.
- Do not choose peanuts that show signs of mold, unusual colors, or shriveled peanuts with wrinkled shells.
- Do not buy peanuts that have been stored for a long time, as their shells are usually not shiny, which will make them smell very oily when cooked.
How to prepare Water Morning Glory Salad

Prepping water morning glory
Peel off the green outer skin of the water morning glory and wash it well. Then, cut the water morning glory into diagonal slices and soak them in a bowl of diluted salt water for about 10 minutes.
After 10 minutes, drain the soaking water, squeeze the water morning glory to remove excess water, and place it in a large bowl.
Add 1/2 teaspoon of salt to the bowl with the water morning glory, mix well, and marinate for about 15 minutes.

Prepare the herbs and roast the peanuts
Pick the tops and young leaves of the mint and perilla, then wash them thoroughly and chop them finely.
Place a frying pan on the stove, wait for it to heat up then lower the heat and add the peanuts to roast. Roast for about 7 – 10 minutes until the peanuts are cooked, then turn off the heat. (You can use an air fryer to save time while roasting the peanuts).
Wait for the peanuts to cool slightly, then use your hands to rub off the thin skin and place the peanuts into a mortar, pound them coarsely.

Mixing fish sauce
Mix the salad dressing with 2 teaspoons of sugar, 2 teaspoons of fish sauce, 1.5 teaspoons of lemon juice, 1/2 teaspoon of minced garlic, and 1/2 teaspoon of minced chili, then stir well to combine the ingredients.

After soaking the jute for the required time, squeeze it to remove excess water and place it in a bowl.
Drizzle the prepared fish sauce over it and mix well, add chopped mint and perilla, then serve the salad on a plate, sprinkle peanuts on top, and it’s ready to enjoy.
