How to choose fresh, clean, sweet oysters

For oysters still in their shells:

  • The oyster shell should have a conical shape and tightly closed; choose short, slightly round or oval-shaped oysters with protruding shells. Avoid buying those that have been opened as they are usually dead.
  • To select fresh and delicious oysters, you should buy them early in the morning. When tapping on the shell, if you don’t hear any sound inside, it means the oyster has dried out.
  • Fresh and delicious oysters have tightly attached meat, filling the shell and containing a lot of seawater.
  • Avoid buying oysters with visible veins in the flesh, as this indicates they have been soaked in water for too long or the meat has turned green.

For shucked or packaged oysters

  • When choosing shucked oysters, make sure the meat is still fresh, not slimy or discolored.
  • For packaged oysters, carefully check the information about the origin, production date, and expiration date. Ensure that the packaging is carefully and securely sealed.

  • You should choose water morning glory of moderate size, not too big and not too small, with a light green color, smooth surface, and intact skin.
  • Water morning glory is grown in water, with a red spot in the middle of the leaf stem. If it has a white spot, you should not buy it as it will cause itching when eaten.
  • Avoid buying pre-cut water morning glory that is bruised or damaged.

How to prepare Oyster Soup with Mung Bean

  • Preliminary processing of mung bean

    First, use a knife to peel the mung bean and slice it into pieces. To avoid the mung bean from browning and to reduce itching, you should put it into a bowl of water mixed with salt immediately after slicing.

    Next, wear gloves and squeeze the mung bean to drain the water. Repeat this about 5 or 6 times, then set the mung bean aside in a basket.

    While squeezing the mung bean, take the opportunity to boil a pot of water and add 1 teaspoon of salt to save time. Once the water is boiling, add the mung bean and blanch for about 5 minutes.

    When the water is boiling, turn off the stove, and pour the mung bean into a prepared bowl of cold water. Rinse and squeeze it again to remove all the itching substances, ensuring safety when eating.

    After purchasing the oysters, soak and wash them thoroughly to remove all dirt from inside the shell, then proceed to separate the shell, keeping only the meat.

    Note: Be careful when separating the shell so as not to dirty the oyster meat inside!

    Wash the tomatoes and then dice them.

  • Cook oyster soup with water spinach

    Put a pot on the stove and wait for it to heat up, then add 1 tablespoon of cooking oil. Next, add the sliced shallots and sauté until fragrant.

    When the shallots are golden and fragrant, add the tomatoes and stir well until they soften to create an appealing color for the dish. Season with a little salt to help the tomatoes cook quickly.

    Then, quickly add the prepared oysters and stir briefly until the oysters are just cooked. After that, remove the oysters and set them aside.

    Add 1.5 liters of water into the pot, then simmer the tomato water on low heat for about 20 minutes before adding the water spinach. After that, adjust the sourness of the water by filtering the tamarind or adding tamarind into the pot. Depending on the family’s taste, adjust the amount accordingly.

    Finally, add the cooked oysters back in, stir all the ingredients together, adjust the seasoning, sprinkle with chopped green onions, and turn off the heat.
