Grilled Pork Belly with Fermented Tofu
  • Preparation

    30 minutes

  • Cooking

    30 minutes

  • Difficulty

    Easy

Ingredients for Grilled Pork Belly with Fermented Tofu Serves 4

Fermented Tofu 6 teaspoons (6 pieces of fermented tofu) Fermented Tofu Liquid 1.5 tablespoons Satay Sauce 1.5 teaspoons Sugar 1 teaspoon Unsweetened Fresh Milk 4 tablespoons Cooking Oil 2 tablespoons Coarse Salt a little Seasoning Powder 1 teaspoon

How to choose fresh and delicious pork belly

  • The color of good meat is bright pink, neither too red nor too pale. Pork that is pale, has a greenish tint, and smells bad is spoiled, so you should not choose this type of meat.
  • Pork that is firm and has high elasticity is good meat. You can test it by pressing your finger into the meat; if it bounces back immediately, is not slimy, and does not leak water or fluid, it is good.
  • You should choose pork shoulder or belly that contains both lean meat and fat so that your dish is neither dry nor overly greasy.

How to prepare Grilled Pork Belly with Fermented Bean Sauce

  • Prepare the pork belly

After purchasing the pork, clean it thoroughly with coarse salt, rinse with water, and then place it in a colander to drain. Cut the meat into bite-sized pieces.

How to clean pork without odor
    • To completely eliminate the odor of pork, before cooking, briefly dip the meat in boiling water for about 2 minutes, then remove and rinse with cold water.
    • Another useful tip is to add a little white wine to the water used for blanching the pork. The wine effectively neutralizes the odor.
Step 1 Prepare pork belly for Grilled Pork Belly with Fermented Bean Sauce
  • Mixing marinade and marinating meat

You put 5 pieces of fermented tofu, 1 tablespoon of fermented tofu water, 1/2 tablespoon of satay, 2 tablespoons of cooking oil, 1 teaspoon of seasoning powder, 4 tablespoons of unsweetened fresh milk, and 1/2 tablespoon of sugar into a bowl and mix well.

Once the mixture is well combined, add the entire sauce to the meat and mix thoroughly, then marinate for 30 minutes.

    Tip for you:
    • Do not use salt to marinate grilled meat as it can easily dry out the meat, making it less tasty.
    • In addition to fresh milk, you can use condensed milk to make the grilled meat tender and fragrant.
    • You should marinate moderately, not too salty so that the pork belly, when grilled and dipped in fermented tofu, will be delicious and flavorful.
    • If you have time, you can marinate the meat longer, from 1 to 2 hours, to enhance the flavor.

  • Grilling meat

First, you brush a thin layer of oil on the grill, then place each piece of pork belly on and grill at medium heat. During the grilling process, you brush sauce evenly on both sides so that the meat has a nice golden color. You grill the meat for 20 minutes and remember to turn the meat every 3 minutes to avoid burning it!

Tip: When grilling, if you see the meat sticking or getting charred, you should add a small amount of oil to the pan to help the meat cook tender and easier to grill.

Beef brisket 200 gr Eggplant 100 gr Okra 100 gr Fermented bean sauce 3 teaspoons (3 pieces of fermented bean) Fermented bean liquid 2 teaspoons Fresh vegetables 200 gr Rice paper 50 gr Ginger 1 piece White wine 50 ml Roasted peanuts 1 tablespoon Green onions 20 gr Cooking oil 4 tablespoons Sugar 2.5 teaspoons Salt 1/2 teaspoon Cooking oil 4 tablespoons

How to choose fresh ingredients

How to choose good beef

  • Choose small, tender beef cuts with bright red color, the meat fibers should not be smooth (unless it is veal), with small white tendons and bright yellow fat. Do not buy large and tough cuts. If you press the beef with your hand and it does not stick and has no foul smell, it’s good beef.
  • Female beef is usually tastier than male beef. The best is still veal because it is tender, has white fat, and fine fibers.
  • If the beef has a pale green color or has round white spots between the meat fibers, it is affected by worms or rice disease. Beef showing signs like dark color, dark yellow fat is old, it will be tough, with yellow bones, poor elasticity, mushy meat, and slimy surface indicates sick beef, which is not good. These are types of meat you should not buy to ensure safety.

How to choose good okra

  • Choose fresh, young okra pods that are small in size, with a beautiful glossy green color, and a thin layer of fine hairs on the outside.
  • Do not choose pods that are soft or have bruises on the outside, as well as those that are too large, as they will be old okra and not tasty.
  • Gently press with your hand; if the skin is crispy and firm, not soft or indented, it is fresh, young okra.

How to choose good eggplant

  • You should choose eggplants with intact, shiny, smooth skin and uniform color.
  • When held, it should feel firm, not too light, and when you press lightly on the skin, it should not be too hard and should not leak juice, it can be purchased.
  • Choose those with a cap still on top; these are fresh eggplants.
  • You can gently press on the eggplant; if you see an indentation on the skin, it is ripe and should not be chosen because it will easily become mushy and not tasty during cooking.

How to prepare Grilled Beef Brisket with Fermented Soybean Paste

  • Prepare the beef brisket

The beef brisket is washed clean after purchase. Next, place the beef brisket in a bowl, add a little julienned ginger and 50ml of white wine, and massage the brisket thoroughly for about 5 minutes. After that, rinse it clean with water and let it drain.

When the beef brisket is dry, cut it into bite-sized pieces, making sure not to cut it too thick as it will be tough and take longer to cook when grilled.

How to clean the beef brisket to remove the smell:
    • Eliminate the unpleasant smell of beef with wine by soaking the beef in wine for 15 minutes, then rinse it clean with cold water; this will reduce the odor and make it tastier when cooked.
    • Remove the beef smell using lemon and vinegar: rub lemon on the beef or soak it in diluted vinegar for a few minutes to get rid of the unpleasant odor of the beef.
    • Eliminate the beef smell with shallots: while marinating the beef, roast a shallot or dry onion, peel it, crush it, and mix it with the beef to remove the smell.
