  • Prepare the ingredients

    Remove the skin from the chayote tips, discard the fibers, break them into short sections about 5 cm long, soak in a bowl of diluted salt water for about 10 minutes, then rinse with cold water, and drain.

    Peel the garlic, wash it clean, and then crush it.

    Place a pan on the stove over high heat with 3 tablespoons of cooking oil. When the oil is hot and bubbling, add crushed garlic and sauté until fragrant.

  • Good quality meat should be dry, not slimy, with normal smell and color.
  • You should buy firm pieces of meat with high elasticity; pressing your finger into the meat should create a dent but not leave a mark when you lift your finger, and the muscle fibers should be even.
  • Meat soaked in chemicals will have a visually appealing color, but it will be dry, the fibers will be tough, it won’t stick to your hand when touched, and when cut, it will be mushy inside and have an odor; if pressing your finger into it leaves no elasticity, you should definitely not buy it.
  • Avoid buying meat with a thin layer of lean close to the skin, which is bright red due to being injected with a type of growth stimulant.

    Buy su su shoots and pick the leaves and young tips, discarding the old, tough roots.

    Soak the vegetables in a basin with diluted saltwater for about 10 minutes, then rinse several times with cold water, and finally drain the vegetables in a colander.

    Wash the pork with diluted saltwater, then rinse with cold water and let it drain. Cut the pork into thin, bite-sized pieces.

    Add half of the minced garlic and onion to marinate with the pork, 1/3 tablespoon of seasoning powder, 1 tablespoon of fish sauce, 1/2 tablespoon of monosodium glutamate, and 1 teaspoon of ground pepper. Mix well for the spices to penetrate the meat, marinate the pork for at least 15 minutes before cooking.

    After 3 minutes, the vegetables will be slightly cooked and softer, remove them and place them in a bowl of cold ice water to keep them fresh and crunchy.

    Heat a pan on the stove with 2 tablespoons of cooking oil, when the oil is hot, add the remaining chopped onions and garlic to sauté until golden and fragrant. When the onions and garlic are aromatic and turn a golden brown, add the marinated pork tenderloin and stir-fry quickly.

    When the pork tenderloin is cooked and browned, add the blanched chayote tops and stir-fry quickly, adding 1 tablespoon of seasoning, 1 tablespoon of fish sauce, and 1 tablespoon of sugar, and stir well to combine the seasonings into the dish.

    After stir-frying for about 3 – 5 minutes, taste and adjust the seasoning to your liking, then turn off the heat. The dish is complete and ready to be served!

    For the shrimp you bought, cut from the head to the eyes, remove the legs, peel the shell from the legs to the head, then use two fingers to hold the tail tightly and quickly pull the body of the shrimp out to avoid breaking the meat at the tail. After that, use a toothpick to remove the intestinal tract from the body of the shrimp, gently pulling it out.

    Rinse the shrimp again to ensure they are clean, drain, and then use a sharp knife to cut the shrimp in half, placing them on a plate.
