    Cut the vegetarian steamed pork sausage into thin slices and then cut each slice into 4 small pieces that are easy to eat.

  • Prepare dried shiitake mushrooms

    Soak the dried shiitake mushrooms in water multiple times until the water is clear.

    To eliminate the pungent smell, place the mushrooms in a pot and boil them over high heat. Once the water starts to boil, remove the mushrooms and place them in a bowl of cold water. When the mushrooms have cooled, squeeze out the excess water.

    How to properly prepare dried shiitake mushrooms

    • Method 1 (soaking): Soak the mushrooms in water for about 1 – 2 hours, then rinse with clean water and drain before cooking. To speed up the hydration, you can soak the mushrooms in warm water at 60 – 80 degrees Celsius, and they will be ready in 7 – 10 minutes.
    • Method 2 (boiling mushrooms): Rinse the mushrooms briefly in clean water, then boil them in a pot of boiling water for about 3 – 5 minutes.

    Note: No matter which method you use, you should gently rub the mushrooms with your hands to remove all dirt, then squeeze out the water and let them drain before cooking.

    When the shallots are golden and aromatic, add 1/2 tablespoon of chili powder, 1/4 tablespoon of five-spice powder, mix well, and then add the Vietnamese pork sausage and shiitake mushrooms to stir-fry briefly.

    Tip: Stir-fry the Vietnamese pork sausage and mushrooms first to allow these ingredients to absorb the seasoning better.

    Add to the pot 2 tablespoons of soy sauce, 1 tablespoon of vegetarian fish sauce, 1 tablespoon of vegetarian oyster sauce, 1/2 tablespoon of vegetarian seasoning, 1 tablespoon of sugar, and 100ml of filtered water, then mix well.

    Braise the Vietnamese pork sausage and mushrooms on low heat until the liquid starts to reduce, then add a little sliced chili and some ground pepper. Stir well again and turn off the heat.

    You can also cut some green onions on top for garnish.

      • Since soy skin absorbs flavors very quickly, you should add it last to avoid over-salting.
      • Depending on your family’s taste, you can adjust the seasoning to your preference.

      When the liquid has reduced, turn off the heat and sprinkle the chopped cilantro, green onion, and chili on top.
