How to choose good ingredients

You can buy annatto oil at markets, supermarkets, reputable food stores, or make it at home.

How to choose good carrots:

  • You should choose carrots that are slender, of medium size, with the green tops still attached, and feel firm rather than too soft. Avoid carrots that are bruised, have cracks, or are missing a piece.
  • Choose carrots that have intact, smooth skin, not rough or with black spots.
  • Select carrots that have a uniform orange color; do not choose those that are too dark, which may indicate they have been treated with chemicals.

How to choose good chicken leg mushrooms:

  • Choose mushrooms that are white, bright, without black spots, bruises, or mushy areas.
  • Opt for firm mushrooms that are not soft or wilted.
  • Avoid mushrooms with cracked caps, as they may be overripe; choose those with firm, solid caps instead.

How to make Braised Tofu with Vegetarian Ribs

  • Prepare the ingredients

    Step 1: Prepare the ingredients

    Slice the scallions thinly, cut the carrot into 5 cm chunks, and slice the chili diagonally. Clean the chicken thigh mushrooms and cut them in half. Crush the green pepper.

    After purchasing the vegetarian ribs, rinse them briefly with water to remove dust, then soak them in water for about 30 minutes to soften, drain, and cut into 4 pieces.

    Tip: You can blanch the carrots briefly to stir-fry them quickly and prevent them from becoming hard.

    Rinse the tofu, dry it, then cut it into pieces about 2 cm thick.

    Heat a pan with oil, when the oil is hot, add the ribs to fry briefly, when the ribs are golden brown, take them out.

    Continue to add the tofu into the same pan and fry until golden brown, then remove it.

    Add 2 tablespoons of cooking oil to the pan, when the oil is hot, add sliced shallots and green pepper along with 1 teaspoon of annatto oil to sauté until fragrant.

    Next, add the vegetarian spare ribs, chicken thigh mushrooms, and carrots, stir-fry evenly, then add 200ml of fresh coconut water. When the coconut water thickens a bit, add another 100ml of cold water, season with 1 tablespoon of chili sauce, 1 teaspoon of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, and 1 teaspoon of soy sauce. Increase the heat and stew the ingredients until the sauce thickens and reduces, then turn off the heat, transfer to a plate, and garnish with chili and shallots.

Tofu 200 gr Spring onion 30 gr Lemongrass 20 gr Chili 20 gr Cucumber 1/2 fruit Curry powder 30 gr Coconut milk 120 ml (or unsweetened fresh milk) Vegetarian fish sauce 1 tablespoon Cooking oil 2 tablespoons Vegetarian seasoning powder 1/2 tablespoon Sugar 1 tablespoon

How to choose fresh, delicious cucumbers without bitterness

  • Choose cucumbers that are bright green, fairly uniform in color, and free of brown spots or yellowing, as these are signs that the cucumbers have been stored for too long and are starting to spoil.
  • Choose straight cucumbers, with little to no curvature. Cucumbers that are long and evenly sized are the type that has a juicy core, making them crunchier and tastier than short, round cucumbers.
  • It is advisable to select heavier cucumbers with a smooth skin, free of bumps, and smaller ones tend to be sweeter than larger cucumbers.
  • Avoid buying cucumbers that bulge out, are large in the middle, or have a big end with a small tail (and vice versa) as these are old cucumbers, with many seeds, hard, and not tasty.

How to prepare Braised Tofu

  • Prepare the ingredients

    Wash the tofu thoroughly, then use paper towels to absorb the water until dry, and then cut it into small square pieces. Mix 1/2 teaspoon of salt with 1/4 teaspoon of sugar, then sprinkle it onto the tofu.
    Peel the garlic and onion, then put them in a blender and blend until smooth.

    If you don’t have a blender, you can finely chop the onion and garlic with a knife.

    Pour enough oil into the pan to be about 2 cm deep, then add the tofu to fry until golden brown, then remove it and place it on paper towels to absorb excess oil.

Season with 1 tablespoon of sugar, add 120g of soybeans from the fermented soybeans and mash. Continue to add 1 tablespoon of chili sauce and stir well, add 150ml of water, bring to a boil, stir evenly, and season to taste.

    Add the tofu and stir well to let the tofu absorb the braising liquid.

How to choose good tofu

  • Color: Good tofu will always have an off-white color. Conversely, tofu containing gypsum tends to be yellower; the more yellow it is, the more gypsum it contains. Therefore, you should avoid buying pieces of tofu that are yellow or have a yellowish tint.
  • Touch: If the tofu feels soft and light when held, it should be purchased. Pieces that are heavy, feel firm, slightly hard, and have sharp edges should not be bought, as these are usually tofu mixed with gypsum.
  • Smell: Pure tofu will have a pleasant aroma, while tofu containing gypsum will either smell of lime or have no smell at all.
  • Taste: Good tofu will have the characteristic rich flavor of soybeans, while tofu containing a lot of gypsum will taste astringent.
