Dried anchovies 200 gr Green onions 4 stalks Sugar 1 teaspoon Fish sauce 1 teaspoon Chili sauce 1 teaspoon Cooking oil 2 teaspoons

How to choose good dried anchovies

  • Good anchovies usually have a bright yellow color, feel dry when touched, and have a slight fishy smell but not too strong.
  • Choose anchovies that still have white eyes.
  • Avoid buying dried anchovies with cloudy flesh, a surface with brown spots, or leaking water, and a foul smell.

How to prepare Spicy Dried Anchovies

  • Prepare the fish and mix the sauce

    Chop off the yellowed leaves and roots of the green onions, wash them clean, cut the tops separately, and cut the green parts into pieces about 1 finger length.

    Wash the dried anchovies thoroughly with plenty of water, then drain them in a basket.

    To make the sauce, put 1 teaspoon of sugar, 1 teaspoon of fish sauce, 1 teaspoon of chili sauce, and 1 teaspoon of water into a bowl, and gently stir to dissolve all the ingredients completely.

  • Sautéed Anchovies

    Place a pan on the stove, add 1 teaspoon of cooking oil, wait for the oil to heat up, then add the dried anchovies and fry on low heat for about 7 minutes until the fish gradually turns golden and crispy, then remove to drain the oil.

    Continue to place the pan back on the stove and add another teaspoon of cooking oil, once the oil is hot, add the scallion tops to sauté until fragrant, then add the dried fish. Mix well, then add the sauce mixture and sprinkle the scallions on top.

    Continue to sauté for about 2 more minutes, season to taste according to your family’s preference, then turn off the heat to finish.
