How to make Green Tea Flan

  • Caramelizing sugar

    Add sugar to a pot with a little water, then cook over low heat, stirring constantly until the sugar completely dissolves and turns a brown color.

    Add a little lemon juice and cold water, continue stirring and bring the mixture to a boil until it thickens slightly, then turn off the stove.

  • Mixing egg and milk mixture

    Crack 6 eggs into a bowl and beat gently in one direction, do not beat too hard to avoid whipping the eggs.

    Add 2 vanilla pods to the bowl, and mix until the vanilla dissolves with the eggs. Then add 400ml of fresh milk and 120ml of condensed milk to the bowl; you can adjust the amount of milk to suit your family’s taste.

    Continue to stir until the mixture is smooth and all the ingredients are completely combined.

    You proceed to mix 1 tablespoon of Japanese green tea powder (matcha) with 150ml of boiling water, stir well until the powder dissolves, then let it sit for about 10 – 15 minutes for the powder to settle at the bottom, after that, strain to collect the green tea water on top.

    Pour the collected green tea water into the egg and milk mixture, stirring continuously until the mixture is well combined, smooth, and creamy.

    Pour the mixture into a new bowl, using a sieve to filter out any remaining lumps.

  • Pouring into molds and steaming the cake

    Add a layer of syrup (also known as caramel) into the plastic jar, then pour the mixed mixture into it, being careful not to overfill.

    You cover the jar tightly and steam it for about 30 – 40 minutes, occasionally wiping the pot lid to prevent condensation from dripping onto the cake.

    When the cake is cooked, let it cool and place it in the refrigerator to store.

How to Make Green Tea Honey Flan

  • Prepare the Flan Molds

    First, prepare the flan molds by using a paper towel dipped in a bit of butter and spreading it evenly inside each mold to make it easier to remove the flan later.

    Next, add 1 teaspoon of honey to each mold, and use a spoon to spread the honey across the bottom of the mold.

  • Mix the Egg and Milk Mixture

    Crack 3 eggs into a bowl, and use a whisk or egg beater to beat the eggs until well mixed.

    Note: When performing this step, make sure to keep the whisk or egg beater always in contact with the bottom of the bowl to avoid excessive air bubbles forming in the eggs, which could affect the quality of the final product.

    Place a pot on the stove, turn the heat to medium, and add 280ml of fresh milk along with 4 tablespoons of sugar. Then add 1 tablespoon of Japanese green tea powder (matcha) to the pot, making sure to use a sieve to filter out any residue in the matcha powder.

    Stir the mixture well and heat until you see bubbles forming in the mixture, then turn off the heat.

  • Mix the green tea flan mixture

    Gradually add the milk and green tea powder mixture into the beaten eggs bowl. Note to pour the mixture very slowly while stirring evenly so that the eggs do not become lumpy.

    Next, pour the mixture into a glass or large bowl, using a sieve to filter out the remaining green tea powder and egg residue.

  • Pouring the mold and steaming the cake

    Pour the green tea flan mixture into the mold and then cover the surface of each mold tightly with aluminum foil.

    Place the cake in a steamer pot and be sure to line the bottom of the pot with a layer of paper towel to prevent the bottom of the cake from burning due to excessive heat while steaming.

    Arrange the flan molds in the pot, pouring warm water into the pot so that the water level rises to half the height of the molds.

    Turn on a low flame and steam for about 30 minutes. After the cake is cooked, take it out and refrigerate it for 3 – 4 hours or overnight, use a knife or the flat side of a spoon to separate around the edge of the cake, carefully invert the cake onto a plate and enjoy.

How to make Green tea flan with agar powder

  • Caramelize the sugar

    Place a pot on the stove, add 100ml of water and 100gr of sugar to the pot, stir and heat until the sugar dissolves, then squeeze the juice of 1 slice of lemon into the pot.

    Continue to heat until the mixture turns a brown color, then turn off the heat, let it cool, and pour it into the flan molds.

    You should mix 100ml of water with 1.5gr of agar powder, using a spoon to stir evenly until the powder dissolves.

    Next, proceed to mix 15gr of Japanese green tea powder (matcha) with 100ml of hot water. Stir until the powder is completely dissolved, then wait for the powder to settle at the bottom and strain the green tea water from the top.

    Separate the yolks of 3 eggs into a bowl with 1 tube of vanilla, using a whisk or egg beater to beat until smooth.

    Then add 440ml of sweetened fresh milk, 50ml of condensed milk, and 70ml of vegetable cream (or whipping cream) into the bowl, and continue to stir until the mixture is fully combined.

    Next, gradually add each tablespoon of green tea into the bowl, about 3 – 4 tablespoons or even more for a darker green color, depending on your preference.

  • Cooking and Pouring the Cake

    Place a pot on the stove, add the pre-prepared mixture of water and agar powder into the pot, and bring it to a boil. Then, gradually add the green tea flan mixture into the pot while stirring continuously.

    Reduce the heat and keep stirring until the mixture reaches a temperature of 70 – 80 degrees Celsius and steams, then turn off the heat and pour the mixture into the mold.

    Cover the mold and place the cake in the refrigerator for 2 – 3 hours. Once the cake has set, use a knife to separate the edges of the cake and invert it onto a plate to enjoy.

Distinguishing Japanese green tea powder (matcha powder) from green tea powder

  • Japanese green tea powder (matcha powder) is made from 100% young buds of the green tea plant, and then goes through a meticulous production process to create a fine powder product, which has higher nutritional value and cost compared to regular green tea powder.
  • Green tea powder is made from 30% tea buds and 70% young tea leaves, going through a simpler production process than matcha powder, therefore it has lower nutritional content and price than matcha.
  • In terms of appearance, Japanese green tea powder (matcha powder) has a bright green color, is fine and smooth, while green tea powder has a slightly darker green color, sometimes slightly yellowish, is not uniformly fine and may have some grittiness.
  • In terms of taste and aroma, Japanese green tea powder (matcha powder) when tasted will have a bitter taste at the tip of the tongue but leaves a sweet aftertaste and has a pleasant smell, while green tea powder has a bitter astringency, no sweet aftertaste, and lacks the fragrance of matcha.
  • When both types of powder are added to water, Japanese green tea powder (matcha powder) will completely dissolve in water while green tea powder will not fully dissolve, leaving some visible grittiness.
