How to make Caramel Flan

  • Cooking caramel

    Place a pot on the stove, add 200g of sugar and 50ml of water, adjust to low heat and bring to a boil. After about 10 minutes, the sugar will gradually turn to a beautiful amber color, then turn off the heat.

    Next, slowly add 2 tablespoons of water until the caramel cools down.

    Once the caramel has cooled, carefully use a spoon to pour it into the mold.

    Tip: If you are using a plastic mold, let the caramel cool completely before pouring it in. If you are using a glass mold, you can skip this step.

  • Soak gelatin

    Put 60ml of filtered water and 28g of gelatin powder into a bowl, use a spoon to stir well until the gelatin swells and thickens.

  • Mix the egg and milk mixture

    Crack 4 eggs into a bowl one by one, then gradually pour in 150g of granulated sugar while stirring continuously until the sugar is completely dissolved in the eggs.

    Place a pot on the stove, add 700ml of condensed milk, adjust to low heat, and heat this milk mixture. After about 7 minutes, the milk will be hot; turn off the heat and remove the pot.

    Next, use a ladle to carefully scoop and gently pour into the bowl with the egg and sugar mixture, stirring continuously to ensure they are fully combined.

    After finishing, use a sieve to strain this mixture to remove any residue.

  • Heat the milk mixture

    Next, add all the gelatin to the egg milk mixture and place it on the stove to heat. While heating, stir continuously to dissolve the gelatin into the mixture.

    After about 7 minutes, when the mixture is hot, pour in 300ml of whipping cream and 1 teaspoon of vanilla, stirring until they are well combined before preparing to pour into the mold.

  • Pour into the mold

    Gradually pour into the mold. Then, place it in the refrigerator for at least 24 hours before it can be enjoyed.

    After placing it in the refrigerator for 24 hours, our caramel flan is ready to be enjoyed. When you want to eat, gently remove it from the mold.

  • Make caramel sauce

    Place a pot on the stove, add 100g of white sugar, 6 tablespoons of water, and cook on low heat until the sugar dissolves and turns a brown color.

    When the syrup changes color, quickly add 1 teaspoon of lemon juice, stir well, and then turn off the heat.

    Next, pour the caramel syrup into glass containers, ensuring that the bottom of the molds is evenly covered with syrup.

    Tip: Lemon juice will help the caramel syrup have a more beautiful color and prevent it from hardening.

  • Cook fresh milk

    Place a new pot on the stove, then add 600ml of unsweetened fresh milk, 200ml of condensed milk, stir evenly over medium heat until the milk just begins to boil, then turn off the heat and let it cool for about 5 minutes.

  • Make flan

    First, crack 4 eggs into a bowl and gently whisk them to combine.

    Tip: To prevent the flan from being porous after steaming, remember to whisk the eggs gently to avoid creating air bubbles!

    Next, slowly add the eggs to the cooled milk pot, stir well once more, and strain the mixture through a sieve for a smooth consistency. Then, pour this mixture into each glass container that has already been filled with caramel.

  • Steaming flan

    Place the flan molds into a steaming pot, then set the steamer over a pot of boiling water. Next, cover the pot’s mouth with a cloth and close the lid tightly, steaming the cake for 5 – 6 minutes over medium heat.

    After about 5 – 6 minutes, check if the cake is cooked by poking a toothpick into the cake and pulling it out. If the toothpick comes out dry and doesn’t have any clumps sticking to it, the cake is done.

    Once the cake is cooked, remove it and let it cool for about 15 minutes, then place it in the refrigerator for about 4 hours before it can be eaten.

    Tip: To prevent the cake from being pitted, remember to steam it over medium-low heat only. Do not steam on high heat as it will cause the mixture to boil vigorously and create many air bubbles inside.

  • If the eggshell is smooth, shiny, or has cracks, it means the eggs have been stored for a long time and are not fresh. When holding the egg up to your ear and shaking it lightly, if you hear a sound, it indicates that the egg is old and has been stored for a long time.
  • You should not buy eggs that show signs of cracked shells because bacteria can easily enter, or if there are signs of white mold appearing.
