How to cook Beer-steamed Lobster

  • Prepare the lobster

When buying lobster, use a small brush or fishing line to gently scrub the entire lobster body to clean off all the mud and algae stuck to the shell.

Evenly drizzle diluted saltwater over the lobster, then rinse the lobster with clean water 1 – 2 times.

Lemongrass and chili should be washed clean and allowed to drain a bit.

You use a knife to crush the lemongrass, then cut it into segments about the length of a finger, and for the thicker parts, you can slice them lengthwise. The chili should be chopped small.

Tip: The seeds in the chili contain components that are not good for health, so you should remove all the seeds when eating.

  • Steam the lobster

Prepare a steamer, using the bottom tier to marinate the lobster.

Add all the lemongrass and chili to the bottom steamer, place the lobster on top, and evenly pour the beer over the lobster. Cover tightly, and let the lobster absorb the spices for about 15 minutes.

After the time is up, transfer the lobster to a plate and place it in the upper steamer. Cover and start steaming on high heat.

Boil for about 5 minutes until you see the water boiling, then reduce the heat to lower, and steam for about 10 – 15 minutes until the lobster is fully cooked, then you can take it out of the steamer.

    Tip:

    • Depending on the size of the lobster, the steaming time may vary; you need to check to determine the doneness of the lobster.
    • Do not open the lid too frequently; you can check after 10 minutes of steaming.
    • Do not steam the lobster for too long, as the meat will become tough, dry, and not tasty.

How to choose fresh and delicious lobster

  • The freshest and most delicious lobsters are still the ones that are alive, with their bodies intact, moving actively. When trying to catch the lobster, it should have a firm body and a curved shape.
  • The lobster shell should be sturdy, with bright colors; the claws should be translucent blue, healthy, and functioning normally, preferably still moving flexibly.
  • Observe the joint between the head and body of the lobster; if there is excess meat protruding too much, it means the lobster has been stored for quite a while, and the meat is no longer fresh.
  • Smell the lobster; if it does not have an unpleasant fishy odor and does not exude slime, it can be chosen for purchase.

How to properly prepare lobster

  • If you are afraid of the lobster moving and injuring you, you can use scissors to stab directly into the meat near the lobster’s head.
  • Use a brush to gently scrub the lobster’s body under running water to clean off any remaining mud and dirt on the shell.
  • Wash the lobster with diluted salt water or a little diluted white wine, then rinse again with clean water, which effectively removes the fishy smell.
