How to choose good lotus seeds

To make longan milk tea with lotus seeds, you can use either dried or fresh lotus seeds.

For fresh lotus seeds:

  • You should choose lotus seeds that are still in their shells, still attached to the pod. When selecting the lotus pods, you should choose large, still green pods. Because these pods are freshly picked, they will be tastier and sweeter.
  • Avoid buying lotus pods that are too old, dark in color, and nearly wilted as the seeds inside these pods will be harder to separate.

For dried lotus seeds:

  • You should buy lotus seeds that are opaque white, small and uniform in size. If possible, you should choose dried lotus seeds that are hand-picked and can be selected at the market.
  • If you buy dried lotus seeds that are packaged, you should choose bags with clear origins.
  • To ensure safety, you should buy dried lotus seeds from reputable large grocery stores and reliable supermarkets.
  • Avoid choosing dried lotus seeds that show signs of mold, seeds that feel soft when picked up, or have an unpleasant smell.

How to choose fresh longan

  • You should buy longan varieties because this type usually has thick, crispy sweet flesh and a more fragrant aroma compared to other longan varieties.
  • You should choose fruits that are still attached to the branches, in bunches. Do not buy fruits that have cracked skins, separated from the branches, and have a sour smell.
  • Ripe longan usually has a dark brown color, with large veins on the skin, and when touched, the skin feels slightly bumpy and fragrant.

How to make longan milk tea with lotus seeds

  • Brewing tea

    Put 60g of lotus tea and 40g of black tea into a cloth bag, then pull the string, tie it tightly, place the tea bag into the teapot, then add 2.5 liters of boiling water, cover it, and brew for 20 minutes.

  • Mixing milk tea

    After brewing the tea, remove the tea filter bag, add 500g of cream powder, and use a whisk to mix until the cream powder is fully dissolved, then add 480g of sugar, mix until dissolved, and then add 340g of condensed milk and stir well.

    To reduce the sweetness of the milk tea, add 2.5g of salt, mix well, and then add 0.7kg of ice cubes and stir gently to complete.

    Tip: To cool down the milk tea without losing its aroma, add ice cubes and mix well, then cover it.

  • Making longan

    Fresh lotus seeds bought are cleaned by removing the inner part and rinsed well, then placed in a pot with 1.5 liters of water. After that, put the pot on the stove and turn on high heat until the water boils, then lower the heat and simmer for an additional 20 minutes before turning off the stove.

    When the lotus seeds are cooked, keep the lid on and let them sit for another 20 minutes to ensure they are completely soft before removing them to cool.

    Fresh longans bought are peeled, then use a sharp stick to go around the longan flesh and remove the seed inside.

    Finally, take the cooked lotus seeds and stuff them inside the longan flesh, and you have completed the longan and lotus seed part!

How to make Longan Seed Jelly Milk Tea

  • Brewing tea

    Put 60g of lotus tea and 40g of black tea into a cloth bag, then pull the string and tie it tightly.

    Next, add 480g of sugar, mix until dissolved, and then add 340g of condensed milk and stir well.

    To balance the sweetness of the tea, add 2.5g of salt and stir well.

    Finally, to cool the milk tea quickly without losing its aroma, add 0.7kg of ice cubes and stir well to complete.

  • Making Longan Jelly

    Put 12g of agar powder into a bowl, along with 120g of sugar and mix well, then add 1 liter of water into a pot, place the pot on the stove, turn on the heat and bring the water to a boil.

    Once the water is boiling, turn off the heat, use a whisk to gently stir to dissolve the bubbles, then add the sugar and agar mixture, and whisk thoroughly to combine with the water.

    Then turn the heat back on to medium and boil the mixture for 5 minutes, then reduce the heat and add 60ml of longan syrup, stirring well for 3 minutes before turning off the heat.

    Fresh lotus seeds bought should have the inner core removed, then wash them clean and place them in a pot with 1.5 liters of water. Next, put the pot on the stove and turn the heat to high to bring the water to a boil, then lower the heat and simmer for an additional 20 minutes before turning off the heat.

    To ensure the lotus seeds are completely soft, cover the pot and let the seeds rest for another 20 minutes before removing them to cool down!

    Next, place the boiled lotus seeds into a round jelly mold, one seed per mold, then pour the jelly mixture over until the molds are full, and cover the molds.

    After that, let it cool and place it in the refrigerator for about 1 hour, then remove the jelly from the molds and you have completed the longan jelly.
