- Sprouts should be used immediately after purchase, or if you want to store them longer, keep them in the refrigerator and use them within 3 – 4 days.

Prepare the cá lăng
Wash the cá lăng thoroughly and fillet the belly part. This part has the least bones and is the fattiest and most delicious part of the cá lăng.
After obtaining the belly part, cut it into thin slices, about 1/2 finger thick.
Tip:- To remove the smell of cá lăng, before cutting the fish, you can rub it all over with salt, which will significantly reduce the unpleasant smell and slime. Then rinse with clean water.

Blanch catfish
Prepare a bowl of ice water and place a pot of water on the stove to boil. When the water is boiling, add the sliced catfish and blanch for about 1 minute.
When the fish is slightly cooked, remove it and immediately place it in the bowl of ice water, this will make the fish crispier.
Wait for the fish to cool, then take it out and squeeze dry, placing it in a bowl or plate.
