How to choose good mangoes for salad
- To make the salad, choose green, unripe, and sour mangoes instead of Thai or Taiwanese mangoes.
- Choose mangoes with a thin layer of white powder on the skin and a dark green color, with a firm and shiny skin.
- Avoid buying overly large fruits, wrinkled skin, and light green color, which are soft when pressed and lack the characteristic aroma of mango. These may be unripe or have been left too long.

How to make Mango Salad with Dried Shrimp

Wash and soak dried shrimp
Wash the dried shrimp thoroughly to remove all the sand and remaining shrimp shells.
Then soak in warm water to make the shrimp soft and tastier.

Prepare the other ingredients
Peel the shallots, wash them thoroughly and divide into 2 parts, the first part sliced thinly, soaked in a mixture of: 100ml ice water, 3 tablespoons of vinegar, and 1 tablespoon of sugar.
Wash the horn chili, cut into 3 pieces, remove the seeds and slice thinly. Then soak them together with the shallots.
Peel the garlic, wash it and mince it together with the remaining shallots.
Peel the mango and shred it into thin, long strips.
Pick and wash the herbs, then plate the lettuce for decoration and let the herbs drain.

Sauté shallots and garlic
Add 3 tablespoons of cooking oil to the pan on the stove, when the oil is hot, add the chopped shallots and sauté for 3 minutes over high heat, when stirring, be gentle, and when the shallots turn light yellow, reduce the heat.
Next, add the garlic and sauté gently until the mixture turns golden evenly, then remove it to a bowl to cool and become crispy.

Stir-fry dried shrimp
Using the remaining oil from frying garlic, add the soaked dried shrimp and stir-fry over medium heat until the shrimp become clearer and fragrant, then turn off the heat and transfer to a bowl.

Prepare the dressing
Cook the dressing with 2 tablespoons of fish sauce, 1 tablespoon of sugar, stirring gently over high heat until the mixture boils and the sugar dissolves completely, then turn off the heat.
Add 1 tablespoon of the sauce to the bowl of stir-fried dried shrimp and stir gently so that the shrimp absorbs the seasoning.

Mix the salad and complete
Add shredded mango, pickled red onion, and chili, along with fish sauce and sugar to the salad and gently toss.
Next, add the stir-fried dried shrimp and fried garlic and shallots, mix well, and let it sit for 5 minutes to absorb the flavors.
Then crush 2 tablespoons of roasted peanuts and add them to the mixture. You can also add whole roasted cashews to taste! Finally, chop some mint and cilantro into the mixture and mix well before serving on a plate.
Tip:- Depending on your family’s taste, you can adjust the seasonings when mixing the salad.
- You can add lemon juice if the salad lacks sourness, or add sugar if the salad is too sour.
