- You should choose unripe jackfruit with a green banana leaf-like skin, fresh, with slightly soft spikes and not fully bloomed.

How to make Vegetarian Jackfruit with Vietnamese Coriander

Prepare the ingredients
Young jackfruit bought should be peeled using a knife, soaked in diluted saltwater for about 10 minutes, then removed and cut into large triangle pieces with sides approximately the length of a finger.
Vietnamese coriander is washed and chopped small. Onions and garlic should be peeled and minced.
Tip: To prevent the knife from sticking to the jackfruit sap and to make cutting easier, dip the knife used for cutting the jackfruit in cooking oil before cutting off the skin. -
Fry the jackfruit
Place a pan on the stove, add 1 tablespoon of cooking oil. Wait for the oil to heat up, then add the jackfruit, frying over medium heat for about 5 minutes until the jackfruit is golden on both sides and firm.

Stewed jackfruit with Vietnamese coriander
Reuse the frying pan that just fried the jackfruit, add minced onion and garlic, sauté until the onion and garlic turn golden and fragrant.
Add the jackfruit along with 2 tablespoons of vegetarian oyster sauce, 2 tablespoons of soy sauce, 1 tablespoon of vegetarian seasoning, 1 tablespoon of sugar, 1/2 teaspoon of monosodium glutamate, and 400ml of fresh coconut water.
Mix well and cook over medium heat for about 30 minutes until the liquid thickens slightly, then add Vietnamese coriander, 5 chili peppers, and 1/3 teaspoon of pepper. Cook for another 8 minutes, adjust the seasoning to taste, then turn off the heat.
