How to cook Vegetarian Braised Jackfruit

Prepare the ingredients
First, you need to simmer the jackfruit. When simmering, remember to keep the jackfruit whole with its skin on, and simmer for about 7 – 8 hours. You can also buy pre-simmered jackfruit.
Wash the Vietnamese coriander thoroughly with water and let it drain. For the chili, just break it into three pieces.
Cut the jackfruit into large pieces of 3 – 4 cm to prevent it from falling apart when braising.

Fry the jackfruit
Heat a pan with oil deep enough to fry, and wait for the oil to get hot before adding the jackfruit. Fry until you see the surface of the jackfruit slightly firming up.
Tip: Using plenty of oil and high heat will ensure the jackfruit does not absorb too much oil, resulting in a beautifully golden color! -
Braised jackfruit
Next, take the Vietnamese coriander and chili that you prepared earlier and put them into a new pot. Layer the fried jackfruit over the coriander and chili in the pot.
Add 3 tablespoons of vegetarian fish sauce, 5 tablespoons of soy sauce, ½ tablespoon of sugar, 2 tablespoons of chili sauce, and just enough water to braise the jackfruit.
While waiting for the jackfruit to absorb the flavors, prepare a clay pot and add the Vietnamese coriander into it. Once the jackfruit is done braising, place it into the clay pot along with the remaining ingredients!
Braise in the clay pot on the stove for about 5 minutes, then turn off the heat. When taking the clay pot off the stove, you can add a bit more Vietnamese coriander and sliced chili on top of the jackfruit, which will make the vegetarian braised jackfruit dish more appealing.
Note: You do not need to braise the jackfruit for too long, just enough for it to absorb the flavors. -

Prepare and Boil Young Jackfruit
After purchasing the young jackfruit, use a knife to peel off the skin, then soak the jackfruit in diluted salt water for about 10 minutes, then remove and let it drain.
Next, cut the jackfruit into large triangular pieces, with each side about the length of a finger.
Place a pot on the stove, add about 200 ml of water and bring it to a boil, then add 1 tablespoon of cooking oil, and boil the young jackfruit for about 30 – 40 minutes.
Finally, remove the jackfruit and let it drain.

Place the boiled young jackfruit in a bowl, then add 1 tablespoon of chopped chili pepper and 1 tablespoon of chopped green onion.
Next, gradually add 1 tablespoon of vegetarian seasoning, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 2 tablespoons of vegetarian fish sauce to the bowl, mixing well to allow the jackfruit to absorb the seasoning and marinate for about 15 minutes.
