- To select fresh chicken thighs, you should choose thighs of medium size, not too large or too small, with thin skin that has a yellowish color.

- Avoid choosing chicken thighs that are too large as they are often water-injected. Additionally, thighs with bruises or pale meat should also be avoided as they may indicate sick chickens.

Prepare the chicken
Soak the chicken thighs in a diluted salt solution for 5 – 7 minutes, then rinse thoroughly with water twice and let them drain.
Place the chicken thighs on the cutting board, use a knife to make 2 cuts on each side of the chicken bone, this will help the chicken absorb the seasoning evenly. Continue this process until all the chicken thighs are done, then place them in a bowl.
Tips for cleaning chicken meat without odor
- Method 1: To eliminate the odor of chicken, after purchasing, you should briefly blanch the chicken in boiling water and then use tweezers to pluck out any remaining fine feathers.
- Method 2: Another tip to remove the odor from chicken is to use a mixture of salt and lemon to rub on the chicken for about 5 minutes, then rinse with clean water and let it drain.

Marinate the chicken
With the chicken thighs you just prepared, we will marinate with 2 teaspoons of salt, 1 teaspoon of pepper, and a little thyme leaves. Use your hands to mix well and gently pat to ensure the seasoning is evenly absorbed.

Prepare the additional ingredients
Peel the onion, wash it clean, and cut it into bite-sized squares. Do the same with the green onions and celery; wash them clean, cut off the roots, and then cut into pieces about 2 – 3 cm long.
Soak the straw mushrooms in diluted salt water for about 5 minutes, then rinse with clean water and let them drain. Use a knife to cut off the stems and any spoiled parts of the mushrooms.
Cut the garlic in half and leave the skin on. Peel the shallots, wash them clean, and drain in a basket.

Gradually add all the ingredients: onion, garlic, green onion, celery, straw mushrooms, and bacon into the previously marinated chicken bowl.
For the shallots, add only half of them; the remaining half will be used to sauté for the final sauce.
Pour wine to cover the ingredients, then use a ladle to gently spread it to ensure the wine submerges the ingredients.
Use plastic wrap to cover the bowl of chicken and ingredients, then place it in the refrigerator overnight to help the chicken and ingredients absorb the spices evenly.
Dry the chicken
After soaking the chicken and ingredients overnight, take the chicken out and use a clean towel or paper towel to dry the surface of the meat, then place it on a plate. Repeat until all the chicken thighs are dry.
Separate the vegetables and mushrooms from the wine
After removing and drying the chicken, continue to scoop out the vegetables and the soaked smoked meat onto a separate plate. Also, scoop out the soaked straw mushrooms and place them on a separate plate!
Fry the chicken
Place a pan on the stove and turn the heat to medium, add 2 tablespoons of cooking oil to the pan and wait for the oil to heat up. After about 1 – 2 minutes, when the oil is hot, add the chicken thighs to the pan to fry.
Fry the skin side of the chicken first and wait for 3 – 5 minutes until the chicken skin is golden brown and crispy, then flip the chicken over and continue frying the other side until golden.
Once the chicken is fried crispy all over, take it out of the pan and let it cool slightly.
Stir-fry vegetables
Reuse the pan used for frying chicken, add the bacon and fry until the bacon releases all its fat. Then, add all the vegetables to the pan, and add 1 tablespoon of concentrated tomato sauce to stir-fry together.
Increase the heat and stir-fry for about 3 – 5 minutes, while stir-frying the vegetables, gently shake the pan to coat the vegetables with the tomato sauce evenly.
Cooking vegetables and chicken with wine and chicken broth
After 3 – 5 minutes of sautéing the vegetables with tomato sauce, at this point you pour all the wine that has soaked the chicken and vegetables into the pan to cook. Cook for 5 – 7 minutes until you see the wine boiling, then turn off the heat.
Next, gradually pour the wine cooked with vegetables and 150ml of chicken broth into the previously prepared frying pan for the chicken thighs.
How to make chicken broth- Step 1: Soak chicken bones in diluted salt water mixed with vinegar for 5 minutes, then rinse thoroughly with 3 times of water.
- Step 2: In the first boiling, add cold water to cover the chicken bones and cook until the water boils, then turn off the heat, discard the boiling water, clean the chicken bones, and add boiling water again once more.
- Step 3: In the second boiling, after the water boils, skim off the foam and reduce the heat to simmer for 4 – 5 hours, then turn off the heat. This way, you have completed the sweet and fragrant chicken broth.
Bake the chicken and vegetable mixture in the oven
Wrap the tray of chicken and vegetables tightly in aluminum foil and place it in the oven. For this dish, we will bake it for 1 hour and 15 minutes at 160 degrees.
Make the sauce
After the chicken and vegetables have baked for the required time and are taken out of the oven, we will start making the sauce.
Use a knife to cut the straw mushrooms that were previously removed in half. Place a pan on the stove, turn the heat to medium, and add 70g of butter to melt, then add the remaining half of the shallot to sauté until fragrant.
After 1 – 2 minutes when the shallots start to become fragrant, add the straw mushrooms to the pan and stir-fry until they are cooked and have a beautiful golden color.
Next, add 30g of flour to the pan and use a ladle to stir well until the flour dissolves completely. Pour all the wine from the chicken and vegetable tray into the pan and simmer until it lightly boils, then cook for about 10 minutes until the sauce thickens, then turn off the heat.
Completion
Remove the chicken thigh and place it on a plate with some vegetables and carrots arranged alongside. Use a ladle to scoop the mushroom sauce and pour it around the chicken thigh. Add a bit of chopped green onion for decoration, and the dish of chicken cooked in red wine is complete.
