How to Choose Fresh Ingredients

How to choose fresh chicken

  • To select fresh chicken thighs, you should choose thighs of medium size, not too large or too small, with thin skin that has a yellowish color.
  • Fresh chicken should have a slight bounce when pressed gently, with the meat inside having a characteristic light pink color.
  • Avoid choosing chicken thighs that are too large as they are often water-injected. Additionally, thighs with bruises or pale meat should also be avoided as they may indicate sick chickens.

How to choose fresh, sweet straw mushrooms (Instead of button mushrooms)

  • When selecting straw mushrooms, you should choose round mushrooms that are of moderate size and uniform with each other, as this will help the dish look more appealing.
  • Additionally, you should choose straw mushrooms with light gray caps as they will be tastier and sweeter compared to white mushrooms.
  • You should avoid choosing straw mushrooms that have bloomed, are soft, or mushy because at this point, the mushrooms will be less sweet and have a pungent smell that diminishes the dish’s flavor.

How to choose fresh and delicious carrots

  • For the chicken cooked in wine dish, you should choose baby carrots to make the dish tastier and more visually appealing. However, if you can’t find baby carrots, regular carrots will do!
  • To select fresh and delicious carrots, you should pick those that are of moderate size, straight in shape, and have smooth skin. Fresh carrots will feel firm when you press them lightly with your hand.
  • You should avoid choosing overly large carrots or those that are cracked, bruised, or soft because these are usually older and will be bland and less sweet.

How to identify good wines

  • For the chicken cooked in wine dish, you should choose red wine because red wine pairs very well with various types of meat. Additionally, red wine helps enhance the dish’s color significantly.
  • On the other hand, if you want to find a bottle of wine to pair with seafood dishes, a bottle of white wine is definitely a great choice.

How to cook Chicken with Red Wine

  • Prepare the chicken

Soak the chicken thighs in a diluted salt solution for 5 – 7 minutes, then rinse thoroughly with water twice and let them drain.

Place the chicken thighs on the cutting board, use a knife to make 2 cuts on each side of the chicken bone, this will help the chicken absorb the seasoning evenly. Continue this process until all the chicken thighs are done, then place them in a bowl.

Tips for cleaning chicken meat without odor

    • Method 1: To eliminate the odor of chicken, after purchasing, you should briefly blanch the chicken in boiling water and then use tweezers to pluck out any remaining fine feathers.
    • Method 2: Another tip to remove the odor from chicken is to use a mixture of salt and lemon to rub on the chicken for about 5 minutes, then rinse with clean water and let it drain.
    • Method 3: One of the simplest ways to prevent chicken from smelling is to use a knife to cut off the oil gland (the “windpipe”) of the chicken, which is both simple and effective.

Soak the straw mushrooms in diluted salt water for about 5 minutes, then rinse with clean water and let them drain. Use a knife to cut off the stems and any spoiled parts of the mushrooms.
