This dish brings a rich and delicious flavor, making it an essential seasoning in Vietnamese family meals. Ingredients for Mackerel Fish Floss Serves 3 people

Medium-sized mackerel 2 fish (about 200 – 300g) Garlic 2 cloves Lemongrass 1 stalk Common seasoning a little (salt/ monosodium glutamate/ ground pepper) Annatto oil a little Shallots 1 bulb

You can use fresh mackerel, dried mackerel, or pre-steamed mackerel. In this recipe, TasteVN will use fresh mackerel to guide you through each step more thoroughly.

How to make Mackerel Floss

  • Prepare the ingredients

    Fresh mackerel after purchase, you will cut off the fins, gut it to remove the internal organs, and then wash it with salt to clean. Next, place the fish in a steaming basket or pot to steam for 10 minutes for the fish meat to cook. After that, take the fish out and flake the soft meat.

    Tip: If you are using dried fish or pre-steamed fish, you can skip the steaming step.

    Preheat the air fryer at 180 degrees Celsius for 5 minutes, then place the fish meat in the fryer, roasting at 200 degrees Celsius for 10 minutes.

    Shallots, garlic, and lemongrass should be peeled, chopped small, or put into a blender to be ground finely.

  • Make Mackerel Floss

    Add the freshly roasted mackerel meat into a mortar, also add the shallots, garlic, and lemongrass, and use a pestle to pound the fish meat until it becomes fluffy.

    Tip: If your meat grinder has a flossing function, you can also use it to save time.

    After that, you put the mixture into the pan and place it on the stove. Season with 1 teaspoon of salt (if using dried fish, you should reduce the amount of salt), 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of ground pepper, and 1 tablespoon of annatto oil.

    Mix the ingredients well, then turn on the stove and fry the shredded fish on low heat until the final product is dry.

    The finished mackerel floss will be very fluffy and have a beautiful brownish-yellow color. When tasting, you will feel the salty flavor just right. Mackerel floss can be eaten with salty sticky rice, white rice, or plain porridge, all of which are very delicious.
