How to make Takoyaki Octopus Cake

Preparing the octopus
After buying the octopus, you prepare it by cutting off the eyes, removing the internal organs and the beak, then making cuts along the edge of the tentacles to make it easier to slice the octopus later.
Next, you rub the octopus with a little salt to reduce the sliminess and then rinse it several times with water until clean.
You place a pot of water on the stove and bring it to a boil. When the water is boiling, you put the octopus in and boil it for 8 – 10 minutes. After that, you take the octopus out and cut it into bite-sized pieces.

Preparing other ingredients
Chop the green onions and ginger.
Prepare a bowl to mix the batter consisting of 20g of wheat flour and 30ml of water to make tenkasu. You can also buy pre-mixed flour if you prefer.
Place a pan on the stove, add plenty of cooking oil, and heat the oil. Next, sprinkle the mixed batter you just prepared into the pan, frying it for 2 – 3 minutes to achieve crispy tenkasu.

Mix the batter
You add into a large bowl the ingredients including 250ml of water, 1 egg, 10gr of sugar, 1/4 teaspoon of salt, and 10gr of soy sauce, then use a whisk to mix well. After that, you sift 90gr of flour, 10gr of rice flour into the bowl, add 1/2 teaspoon of baking powder, and mix well.
Tip: Adding rice flour to the batter recipe will help the cake be more chewy and rich. If you don’t have rice flour available, you can also substitute it with regular flour.Finally, you sift the mixture once more for a smooth consistency.

Grilling Octopus Cakes
You place the baking tray on the stove, heat it up, then use a brush to apply a thin layer of oil on the molds. Next, you pour the batter into the molds so that the batter is only 90% full. At this point, you should adjust the heat to low and add each type of topping you have prepared into the batter.
Once you have added all the toppings, increase the heat to medium and grill for 3 – 5 minutes. When you see the surface of the cake starting to firm up, use two skewers to carefully flip the cake vertically and pour more batter into the mold.
Grill for another 3 minutes; when the batter just poured has set, continue to use the skewers to turn the cake and pour more batter to make the cake balls round and full. If you notice any cake surface that isn’t golden, turn that side down.
Continue to flip and grill the cake for another 5 minutes; when the cake is cooked, you can take it out, and it’s done.
Tip:- If you are not yet accustomed to it, only make a few molds first so you can flip the cakes in time and avoid burning them, making them not delicious. Once you are proficient, you can fill the tray completely to grill faster.

Finished Product
