How to choose chicken meat for making delicious shredded chicken

  • You should choose pre-prepared chicken breast pieces with a rosy skin and naturally yellow meat. When touching the chicken meat, it should still feel dry and have good elasticity, without leaving an indentation where you press your finger.
  • If you buy skinless chicken breast, observe the layer of fat on the chicken. It is better to choose pieces with white fat as the meat will be tastier. Choose chicken breast pieces with fewer striations in the meat. The more striations there are, the less fat and protein there will be, and these striations will make it harder for the chicken to absorb seasonings and sauces during cooking.
  • You should not buy chicken breast pieces that have bruises or strange colors, and if they smell foul, as this indicates poor quality chicken.

  • Boil the chicken

    You place a pot on the stove and pour in about 300ml of water, then add star anise, red dates, 2 chili peppers, sliced ginger, 50ml of white wine, and the chicken into the pot. Boil the chicken over high heat, when the water boils, reduce to medium heat and continue to boil for about 30 more minutes for the chicken to be tender. After the chicken is cooked, take it out onto a plate and let it cool.

  • Shred the chicken

    To make it easier to shred the chicken, place the chicken on a cutting board and use a pestle to gently pound evenly on the piece of meat. Then you can start shredding the chicken into small pieces.

  • Make chicken marinade

    You prepare a small pot, then add 2 spoons of dark soy sauce, 1 tablespoon of regular soy sauce, 2 teaspoons of oyster sauce, 1 tablespoon of sugar, 1 teaspoon of salt, 2 teaspoons of five-spice powder, 1 tablespoon of annatto coloring, 15ml of water, 1 teaspoon of chili paste, and 3 teaspoons of cooking oil into the pot.

    You place the pot on the stove over low heat and stir slowly until all the ingredients are dissolved. Once you see the sauce boiling and all the ingredients have dissolved, you turn off the heat and let the sauce cool.

  • Marinate the chicken

    You put the shredded chicken into a large bowl, then add the entire sauce and mix well so that the chicken absorbs the marinade. Let it sit for about 10 minutes to allow the chicken to soak up the spices.

  • Dry and grind the chicken

    Place a pan on the stove and add all the marinated chicken, stir-frying over low heat for about 20 – 25 minutes until the chicken is dry.

    Next, place the chicken into a blender, making sure to only press the button for about 1 – 2 seconds before turning it off, repeating this until the chicken is fluffy and finely shredded.

    Finally, add the ground chicken back to the pan and continue to stir over low heat for about 10 minutes to further dry out the chicken floss.
