How to Choose Fresh Chicken Wings
- To make grilled chicken wings, choose industrial chicken wings which will have more meat and are larger than local chicken.
- Choose wings that are a natural light yellow color, press them to see if the meat is firm and elastic.
- Do not buy wings with bruises, blood clots, uneven color, foul smell, or soft, mushy meat.
- The fresh wing meat should be clear; if it appears dark, it may indicate that the chicken died before being processed.

How to make Grilled Chicken Wings with Salt and Chili

Prepare the chicken wings
Wash the chicken wings with water. Next, use salt to rub the wings to clean off dirt and grease. Then rinse with clean water and let drain.
Then use the sharp tip of the knife to gently poke around the surface of the wings so that the marinade can soak in better.
How to eliminate the smell of chicken meat- After rubbing with salt, you can use a mixture of alcohol and sliced, crushed ginger to rub and massage the chicken wings once more, which helps to eliminate the odor and dirt.
- Wash clean and wait for it to drain. Additionally, you can add lemon to the water and soak the wings for 15 – 20 minutes. Then take them out, rinse with cold water, and let them drain.

Prepare other ingredients
Shallots and garlic are peeled but kept whole. Ginger is washed, peeled, and sliced. Chili is washed and drained.
Thai basil is picked, washed, and drained. Cucumber is washed and sliced.
To make the green chili salt for dipping grilled chicken wings, you put 2 red chilies, 5 green chilies, 2 teaspoons of salt, 1 teaspoon of monosodium glutamate, and a little Thai basil into a mortar, then use a pestle to grind the mixture into a paste.

Add 3 chilies, sliced ginger, 3 shallots, 4 garlic cloves, 1 teaspoon of salt, 2 tablespoons of cooking oil, 1 tablespoon of fish sauce, and 2 teaspoons of chili powder into the grinder.
Add 2 tablespoons of unsweetened fresh milk, 1 tablespoon of chili sauce, 2 tablespoons of honey, and 1 teaspoon of turmeric powder.
Then, grind the mixture until smooth, then strain the mixture to remove the solids, keeping the liquid to marinate the chicken wings.

Marinate the chicken wings
Place the chicken wings in a large bowl, mix well with 2 tablespoons of the marinade, and let the chicken wings marinate for about 1 hour to absorb the seasoning.

To stabilize the oven temperature, preheat the oven for 10 minutes at 180 degrees Celsius.
