How to Cook Grilled Chicken Wings with Fermented Bean Sauce

  • Prepare the Chicken Wings

    To clean the chicken wings and remove any odor, place the wings in a basin with 2 teaspoons of salt, 1 tablespoon of white wine or vinegar, and 200ml of water, then massage the wings with this mixture for 5 minutes.

    Next, use a knife to scrape off any dirt stuck to the skin of the chicken and rinse it thoroughly with water.

    Soak the chicken wings in hot water at about 70 degrees Celsius mixed with 2 tablespoons of salt for 5 minutes, then use a knife to scrape off any dirt on the chicken skin.

How to Make Grilled Chicken Wings with Garlic Butter

  • Prepare the Chicken Wings

    Put the chicken wings in a basin, add 5 tablespoons of salt and massage well, scrape off any dirt stuck to the skin of the chicken, then rinse with cold water and let it drain.

    In a bowl, mix together the ingredients including: 2 teaspoons of salt, 1.5 tablespoons of sugar, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of five-spice powder, 1/2 teaspoon of ground pepper, and 1/2 teaspoon of chili powder.

    Mix the spice mixture with the chicken wings, then add 1.5 tablespoons of oyster sauce, mix well, and marinate for about 1 hour to absorb the flavors.

    30 grams of peeled garlic, minced. Minced chili. Green onion, minced at the white part, and the green part chopped.

    Heat 50 grams of butter until melted, then mix well with all the onion, garlic, chili, and 1.5 teaspoons of lemon juice.

    Tip: If you don’t have time, you can lightly cut 2 lines on the inner side of the chicken wings to help the chicken absorb the spices more easily, thus reducing the marinating time to just 30 minutes.

    Preheat the oven for 10 minutes at 210 degrees Celsius to stabilize the temperature.

    Mix the chicken wings again to evenly coat them with the seasoning. Use a sharp stick to pierce through the chicken wings to straighten them out.

    Prepare a tray lined with aluminum foil and baking paper, place a rack on top of the tray, and arrange the chicken wings on it.

    Put the chicken wings in the oven at 200 degrees Celsius for 25 minutes.

    After 25 minutes, take the chicken wings out, brush the butter mixture over them, then place them back in the oven, select the top grill mode, and grill for an additional 5 minutes at 220 degrees Celsius.

How to Choose Fresh and Delicious Chicken Wings

  • To make grilled chicken wings, choose industrial chicken wings as they will have more meat and are larger than free-range chicken wings.
  • Choose chicken wings that have a natural light yellow color, and when pressed, the meat should be firm and elastic.
  • Do not buy wings with bruises, blood clots, uneven color, a foul smell, or soft and mushy meat.
  • The fresh wing meat should be clear; if you see a dark dull color, it may indicate that the chicken died before slaughter.
