How to choose fresh ingredients
How to choose fresh young coconuts
- To choose fresh young coconuts, you should select those with soft flesh, bright white color, and you can identify them by pressing the flesh with your fingernail.
- Alternatively, if possible, check if the coconut flesh has accompanying creamy water; if it does, then the coconut is still young and has soft flesh, rich in milk.
- Additionally, you can identify young coconuts by easily removing the brown outer layer of the coconut flesh with your fingernail.
How to choose fresh and delicious bananas
- You should choose semi-ripe Siam bananas that are not overly ripe for this recipe, as the final product will be sweeter and more fragrant.
- You should avoid buying bruised bananas and prioritize selecting those with a moderate size. If the banana is too large, it may have been treated with excessive chemicals or growth hormones.
- It is advisable to prioritize buying ripe bananas but also with some green and yellow ones. These bananas are usually naturally ripened, while those ripened with chemicals will have an even beautiful yellow color.
- Naturally ripened bananas will have an even ripeness throughout the stem, body, and bunch (even if there are some green bananas). Bananas that are artificially ripened will have yellow bananas, but the stems will be hard and sometimes still slightly green.
Where to buy quality fresh coconut milk and bananas

- Additionally, to ensure quality, you can also easily make your own coconut milk using the following recipe from TasteVN.
How to make Coconut Banana Jelly
-
Prepare the ingredients
First, wash the bananas you bought, cut them in half lengthwise, and then cut them in half again. Remember to keep the banana peel intact so that the bananas do not get too mushy while boiling.
For the coconut, cut it in half and then scrape out the coconut meat. Be careful not to scrape too deep into the coconut shell, as this layer will cause the jelly to turn yellow and also make the jelly slightly bitter.
-
Boil the bananas
After cutting the bananas, place half a pot of water on the stove and add a little salt. Heat the water on the stove until it boils, then add the bananas and boil them over medium heat.
Boil the bananas for about 2 minutes, then remove them and immediately place them in a bowl of cold ice water. Soak the bananas in the cold water for about 5 minutes to help them not become too mushy.
After soaking the bananas in cold water, peel the bananas and place them in a bowl.
-
Soak the jelly powder and cook
Add 300ml of coconut water to a pot along with 70gr of sugar and 5gr of jelly powder. Then stir well until the jelly powder is completely dissolved and let it soak for 5 – 10 minutes for the jelly to expand.
After soaking, place the pot on the stove over medium-low heat. While cooking, remember to stir frequently to prevent the jelly from clumping and burning at the bottom of the pot.
When the jelly starts to boil, reduce the heat and add 200ml of coconut milk and 30gr of condensed milk. Stir well to combine the mixture. Then turn off the heat and adjust the flavor of the jelly to your taste.
-
Pour into molds
Pour a thin layer of jelly into the mold. Next, add bananas and grated coconut into the jelly mixture and stir well.
When the layer of jelly in the mold firms up a bit, pour the banana coconut jelly mixture into the mold. Spread it evenly and let the jelly cool, then place it in the refrigerator for 1 – 2 hours to let it fully set.
-
Completion
After the jelly has completely set, use a knife to cut the jelly into bite-sized pieces. Thus, you have successfully completed the coconut banana jelly.
-
Final Product
The coconut banana jelly is crispy, delicious, and rich. This jelly dish is not only tasty but also easy to make, right? If you can’t finish it all, you can store it in the cool compartment of the refrigerator and use it within 2 days.
