  • Prepare the ingredients

    First, wash the bananas you bought, cut them in half lengthwise, and then cut them in half again. Remember to keep the banana peel intact so that the bananas do not get too mushy while boiling.

    For the coconut, cut it in half and then scrape out the coconut meat. Be careful not to scrape too deep into the coconut shell, as this layer will cause the jelly to turn yellow and also make the jelly slightly bitter.

  • Boil the bananas

    After cutting the bananas, place half a pot of water on the stove and add a little salt. Heat the water on the stove until it boils, then add the bananas and boil them over medium heat.

    Boil the bananas for about 2 minutes, then remove them and immediately place them in a bowl of cold ice water. Soak the bananas in the cold water for about 5 minutes to help them not become too mushy.

    Add 300ml of coconut water to a pot along with 70gr of sugar and 5gr of jelly powder. Then stir well until the jelly powder is completely dissolved and let it soak for 5 – 10 minutes for the jelly to expand.

    After soaking, place the pot on the stove over medium-low heat. While cooking, remember to stir frequently to prevent the jelly from clumping and burning at the bottom of the pot.

    When the jelly starts to boil, reduce the heat and add 200ml of coconut milk and 30gr of condensed milk. Stir well to combine the mixture. Then turn off the heat and adjust the flavor of the jelly to your taste.

  • Pour into molds

    Pour a thin layer of jelly into the mold. Next, add bananas and grated coconut into the jelly mixture and stir well.

    When the layer of jelly in the mold firms up a bit, pour the banana coconut jelly mixture into the mold. Spread it evenly and let the jelly cool, then place it in the refrigerator for 1 – 2 hours to let it fully set.
