Prepare the crispy carp
When you buy crispy carp, scrape off the scales, cut the fins, gills, and tail. Then, remove the intestines and use salt to rub thoroughly on the fish before rinsing under running water 2 – 3 times.
Next, cut the fish into slices about 2 fingers thick.

Remove the old leaves and stems of lettuce, mint, and water spinach, wash thoroughly, and let them dry.
Wash the tomatoes and cucumbers, then slice them thinly.
Remove the stems from the chili and chop finely.

Marinate the crispy carp
